Another way you could have done the always night thing is to set it to midnight and then disable the day cycle. While I haven't tried this, I assume this would lock it to midnight saving you from having to stay in render distance of the command block.

Love your Minecraft videos, i know literally everyone hopped in the “100 Day” train after you and a lot of those videos are entertaining but yours are still my favorite because they’re not super modded or have crazy shaders or whatever, it looks like Minecraft how I play Minecraft.
