Because classic taxidermy used the animals actual bones instead of a foam form

Original bad taxidermy, taxidermy has evolved a lot since that deer

The hide probably looked much better 100 years ago, but you can tell that the mannequin structure has improved quite a lot. Nowadays there are well diverse sizes of Styrofoam casts in inventory while back then there were more bones and sculpting involved which could contribute to the unnatural and bland shape of the older one.

It does look odd. I think it's that it has a very slight neck.

No he means like the deer head and pieces of the skull but modern deer mounts just have a frame that looks like a deer and all they use that is form the deer is the hide and antlers
