Very nicely done but you might wish to add a locking feature to prevent someone from leaning on the wrong side and causing it to drop back into the shelving position. Basically a Desk / Shelve lock. Great workmanship!

Gas springs last longest with the shaft down because gravity keeps the oil inside lubricating the shaft rings. Similar to how a wine bottle last longest with the cork down to keep the cork from drying out, leaking air and turning the wine to vinegar. Nice idea, I may need to make one.

Would putting a latch or a sprung loaded pin to prevent the table self closing when you put any weight that would trigger it help?

It looks like you're relying on the friction between the dowels and the support beams to keep the table from flopping up or down with a slight touch. Those are going to wear down quickly. It seems like it would be safer to put a clutch or dashpot on one or two of the pivots and put bearings or bushings on the others. Or does the air spring have something in it to do the same job?
