Muffins are traditional Ukrainian pastries in the form of small bagels with various fillings, most often some jam or chopped nuts. I want to share a recipe for rolls stuffed with plums, nuts and poppies - just delicious! You want to indulge in such golden and chubby buns as often as possible.
Recipe for delicious rolls
Portions: 6-8
Preparation time: 1 hour 10 minutes
Cooking time: 30 minutes
Ingredients for the dough:
320 g of wheat flour
260 g of corn flour
200 g of butter
1 egg
350 g cream
10 g of dry yeast
3 st. l. sugar
pinch of salt
optional 1 egg yolk (for lubrication)
powdered sugar if desired
For the filling:
400 g plums
200 g of sugar
50 ml of water
3 st. l. poppy (+ for sprinkling)
3 st. l. walnut crumbs
How to cook rolls - step by step recipe
Prepare the ingredients for the dough and for the filling of the rolls.
Wash 400 g of plums and remove the stones. You can also use pre-thawed plums. Cut them in half and beat in a food processor with 200 g of sugar and 50 ml of water.
Put 200 g of room temperature butter in a food processor bowl, add 320 g of wheat flour and 260 g of corn oil to the oil. Add 1 egg, 3 tbsp. l. sugar and a pinch of salt. Rub with a hook attachment.
Stir in a bowl 10 g of dry yeast with 350 g of sour cream and add the mixture to the dough. Knead a pliable dough. If necessary, add a little more flour or sour cream. Wrap the finished dough in cling film and leave for 1 hour in the refrigerator.
Using a rolling pin, break the walnuts into crumbs. We need about 3 tbsp. l. And if you want faster - nuts can be killed in a special bowl of food processor.
Add the nut crumbs to a bowl of plum puree.
Add to plums and nuts 3 tbsp. l. poppy. So the taste of the filling will be richer.
Mix the filling well until the ingredients are evenly distributed.
Remove the dough from the refrigerator and divide into 2 parts, each of which roll out into a layer with a diameter of about 20 cm. Divide the dough into triangles, they should turn out from 6 to 8 pcs.
Place plum, poppy and nut fillings on each triangle.
Wrap each triangle in the shape of a bagel.
Place the formed bagels on a baking sheet covered with parchment. The distance between the bagels should be at least 2 cm, because they will increase slightly in size. Grease each bagel with egg yolk.
Sprinkle with poppy seeds. Bake the rolls at 200 degrees for 15-20 minutes. Shake the finished bagels with icing sugar if desired.
