Dumplings are another cult Ukrainian dish that is almost as popular as borsch. So today we are cooking dumplings steamed with chicken liver, I am almost sure that you have not tasted them yet. For me, Poltava dumplings are the biggest and best, but Ukrainian cuisine is everywhere, that's why this wonderful recipe got to Kyiv. If you want to feel the true spirit of Ukrainian cuisine, be sure to cook dumplings with chicken liver. They will taste best if steamed. Add melted butter and taste with sour cream!
For dumplings: 24 pcs. (6 servings)
Ingredients for making stuffed dumplings:
500 g of flour
330 ml of kefir (2, 5% fat)
½ tsp. soda
1 egg
1 tsp. salt
For the filling:
400 g of chicken liver
1 onion
2 cloves garlic
150 g of butter
2 st. l. oil
sour cream (for serving)
How to steam dumplings
Prepare dough for dumplings. To do this, mix 500 g of flour with a pinch of salt and ½ tsp. soda. Pour 330 ml of kefir and add the egg. Knead a soft dough and leave it on the table under a towel for 20 minutes.
Peel a chicken (400 g) and grate it in salted water for 15 minutes.
Finely chop the onion and fry in oil until soft. Press two cloves of garlic, cut and add to the onion.
Pass the boiled liver through a meat grinder and mix thoroughly with the roast. Allow the filling to cool.
Divide the dough into small pieces, put in each piece 1 tsp. fillings and glue. Form dumplings into a ball.
Grease the steamer with oil and place the balls at a distance of 1.5 cm from each other, because they increase greatly in size.
Cook each batch of dumplings for 15 minutes maximum. Grease the finished dumplings well with melted butter. Serve the dumplings still warm with sour cream.
