This easy and delicious Irish Stew was a perfect way to celebrate St Patrick's day. With a giant chunk of sweet soda bread and washed down with a dark Irish Ale, this might just be my new favorite holiday!

Not coddle, unfortunately. There is no frying and no carrot in coddle. You also dont need to slice your potatoes, its not a lancashire hotpot. Coddle is just sausages, bacon, onion and potatoes boiled.
