If you are thinking what an interesting vegetable salad to cook, then keep it - a salad with baked beets. At first glance, it sounds too simple, but I'm sure that the combination of simple ingredients can create a really great taste. The preparation itself is also quite simple, you only need time to roast the beets, everything else will take no more than 10 minutes. So, don't hold back and make a roast beet salad today!

Ingredients for beet salad:
2 beets
75 g dried apricots
2 st. l. yogurt
10 sprigs of parsley
50 g of walnuts
2 st. l. pumpkin seeds
salt and pepper to taste
Step-by-step salad recipe
Turn on the oven to preheat to 180 degrees. Thoroughly wash 2 beets and place in a baking dish. Place in a preheated oven for 1.5-2 hours, depending on size.
Allow the prepared beets to cool and cut into pieces of your choice: straws, cubes or thin slices. I decided to make two types of slicing and cut one part into bars and the other into slices. The skin can not be cleaned.
Chop with a knife greens 10 sprigs of parsley. Cut into small pieces 75 g of dried apricots and 50 g of walnuts.
Put beets in a bowl, add parsley, nuts and dried apricots. Shake 2 tbsp. l. pumpkin seeds. Add salt and pepper to taste, add 2 tbsp. l. yogurt for dressing. Stir in the salad.
It's easy to cook!
