When a pass is intercepted in the end zone, there is nothing stopping the defensive player who caught it from running the other way, but if he goes down in the end zone it is a touchback and his team gets the ball at their 20 yard line. If he decides to run it, unless he sees a clear path, he will likely get tackled before the 20, setting up a more difficult position for his offense. Almost all defensive players are taught from an early age to go down in the end zone if they intercept a pass there.
