In the comic Skull Island: The Birth Of Kong, my understanding that his adult, fully-grown parents, were only about 250-feet tall. Immediately after his birth, Kong’s parents hid him in a cave as they tried to fight off the Skullcrawlers... but the Skullcrawlers overpowered Kong’s parents and killed them. Apparently, the cave that Kong was hidden in had geothermal radiation, and over the years, it was this radiation that has caused Kong to grow to a much larger size than his parents, able to rival even Godzilla’s enormous size. So there ya have it; that’s the canon explanation as to why Kong is so much larger. Him being an adolescent in Kong: Skull Island is only part of it.

Not only was Kong an adolescent and still growing in "Skull Island", but the Hollow Earth tunnels running under the island are teaming with radiation (because they go deep within the Earth). This radiation helps accelerate things like growth, cell& plant reproduction, etc. So, Kong using the Hollow Earth tunnels on Skull Island, also contributed to his growth, too.

If you can believe a giant lizard can spew atomic blasts with his mouth, I don't think it's that big of a stretch to imagine a monkey grow so big.
