You are supposed to flatten it with a rolling pin and then try to fry them. Kinda looks like 'luchi', a bengali dish.

To fry the dough to such a fluffy consistency, 1. you need to roll it around/ flatten it with a rolling pin 2. Use oil, not water to mix the dough 3. Aereate the dough well while mixing, and make sure that, the dough is not heavy or sticky(use dry flour while rolling to prevent stickiness). The dough should be fluffy. 4. Be very quick while frying the dough- rotate it to the non fried parts quickly in the oil. Leaving it stagnant in one place in a wok of hot oil will burn it. When you make the dough , after that make it flat like a biscuit and when it become flat , put in the frying pan in medium flame and keep on pouring oil and fry it until it's cooked . Hope this can help :)

The dough is called a bobobi dough from indonesia, its suppose to expand as it absorbs more oil, making the inside hollow. Edit: I meant bola ubi, its a common indonesian street food, im from indonesia and i see it everywhere, im not claiming anything. I also saw that its common in japan china, and other cultures, sorry for the misunderstanding 😁

Glutinous flour or mochiko for the dough, covered in sesame seeds then fried (it’s literally translated to sesame ball from Chinese) Press and rotate while fried to make it hollow and sesame seeds helps it not to stick to ur wok or utensils. Very easy to make in smaller sizes but need to be super skillful with the gigantic size good luck 🤞

I think it's because of the heat 🤔. So you can try to fry it on low heat to avoid burning it before it swells and grows in size

You have to flatten the dough in a round shape using a rolling pin just like we do for pizza but dough should be thinner than that. Then afterwards if you fry that, it will become puffy. In India, we call this 'Puri' when made with wheat flour and 'Bhatura' when made with all purpose flour. Recipes for Puri, bhatura are available where you can know how to easily flatten the dough. For all those who are correcting here that it's poori or bhature and it needs to be flattened, the first video clearly shows round ball put to fry and getting good results. For once think out of box, not everything is what you expect it to be, it's a different food item from a whole different countries, sesame rice ball, it's called.

I think it’s because in the video, they fried it so that all areas had the same amount to frying heat thingy, but you just poured it with a spoon, which could cause one area to have more oil than others, so it burnt while the other side didnt

In Tamil Nadu, South India, we add jaggery or sugar with some cardamom powder and make small dough balls along with those ingredients then deep fry them. It's delicious evening snack. It's called inipu bonda ( sweet bonda)

Not an expert, but maybe a problem with the rising agent? Yeast may be too slow for it to rise in oil, though that bread looks like it didn't rise at all. That has to be a super light dough as well, for it to grow as much as it did in the video. Oil may have been too hot and burned it before it could start to rise? Perhaps it needed to prove first to relax and gain some of that air it needs? (Most of this comes from all the Great British Baking Show I've watched, I don't bake bread)
