Iron skillets are my main cooking utensil. I have cooked in them for over 40 years. I cook spanish rice, goulash, spaghetti sauce, and many other things in them. Nothing wrong with boiling water in an iron skillet. The important thing is drying them over heat when you are done cleaning them to evaporate any moisture so that they don't rust. Then apply a thin coat of cooking oil to reseason them. Also, a lid of some sort will help cook grits, rice, noodles, and other things that have to boiled, faster and more efficiently by holding in the steam and heat. Without a lid the water will evaporate faster and you may end up needing to add more water, and it takes longer to cook the food without a lid. Iron skillets can also be used to bake in. Johnny cakes (corn muffin mix baked as one cake), cornbread, cobblers, etc. will bake in an iron skillet. If you are baking outdoors with coals and don't have a lid, a second iron skillet of the same size can be turned upside and placed on top of the one you are baking in, and then coals placed on top of the upside down skillet.

I used my 5 inch sander with a medium grit on my skillet till it was very slick. Then cured it in the oven. Learned this from Kent Rollins on his channel. You made a great video for breakfast in the wind.

Great video as always 👍 Grits??? Not seen them here in the U.K. but will keep looking! About the only thing I strongly disagree with Kent is this obsession he has with taking a sander to cast iron😂 my “rough” Lodge 8” skillet has cooked fried/ scrambled eggs from day one without sticking!! The more I use it the better it becomes. Kindest regards from deepest Dorset England 🇬🇧🇺🇸

I just moved to a mountain community and have a great area outside I set up for outdoor cooking. I can now practice and enjoy working your videos. I really have come to favor the out door coffee. I live in California and no one here knows about the wonder of grits. My advantage is, I often work in Thomasville NC and can eat all the grits available to me. The Lord has blessed me with real grits. The Lord has blessed you too!

I've worked in Thomasville, NC at a Milliken Plant that wove cotton with, what was brand new 30 years ago, the jet looms... very long looms. Thomasville had about the largest population of deer I'd ever seen.

After work I would head up to Marco's Pizza and take it to go and eat it at Oak Hollow Lake. Good pizza and a great lake. It's been about a year since being there. I liked the area. A place I would move to.

I like to put my eggs directly in the grits once the butter and cheese are melted, cooking them just enough to have slightly runny yellows when everything is done. Enjoyed your video and subscribed for more!

I live in California and I love grits. My brother brought them home from basic training in Mississippi. That was back in the 60’s. I’ve eaten them ever since.

Great job. I’m not very good at flipping the egg without breaking it. For years now, I just add a little water to the skillet after it’s nearly done on one side, cover with a lid and steam the top of the egg. Cooks the top in a minute, no flipping!

I used avocado oils on my cast iron. It has a smoke point of 500 degrees whereas olive oil smoke point is between 375-400 degrees.

Thank you Mr. West for an enjoyable and informative video. I had no idea that restoring the seasoning of a cast iron frying pan was so simple : - ) I believed that to season a frying pan, it had to be coated with oil and turned upside down and heated in an oven at a high temperature for a full hour. Thank you for demonstrating a much easier method ... Cheers.

An expert commented and convinced me that the pan was NOT seasoned just well greased. I know how to season with oil and baking, so I have to agree with him. That still doesn't take away from the beauty of this method. Being able to turn a non seasoned iron skillet into a non stick iron skillet by using 2 types of fats has served me well for years. No one had very much, and had we to learn to live humbly! Then I became a US Army Ranger in the 1950's/60'. At times food was a luxery. This is why I enjoy watching what you do! Mighty fine eats! I do love grits and cooking on a hobo stove. I live in east Tennessee and my favorite wood for the hobo stove is tulip poplar limbs like you used. The inner bark makes excellent tinder too. I especially appreciate your prayer of thanks giving for your food.

I got my first ignition on char cloth with flint and steel today. It made me feel like, well David West. Love your videos brother. Got it done the second time just now and got a fire going in my small solo stove. You make it look too easy, it ain't. It requires alota practice

Title saying 6 inch skillet caught my eye. I use one every time I camp. Carry it with me as my main go to skillet since it’s just me camping. I subbed and hit the bell. Looking forward to checking out your other videos. I had grits one time as a child and ran out of the house spitting them all over the yard and haven’t ate any since then. I might have to doctor them up to try them again even though I’m 57 now. Lol

My wife loves sunny side up eggs and this little skillet handles two just nicely. Once I found a lid for it she keeps it on the stove. I am not allowed to touch it even though I found it and restored it. These things are priceless.....eggs slips right out.

@@DavidWestBgood2ppl I have never tried any of the fire making methods you shared. I grew up in the jungle of Borneo and I only hear stories of my Grand Dad using stones to spark fire. Hi David. I live in Texas where there’s all sorts of trees. I’m still learning how to identify them. I really enjoy practicing in my back yard. I only have one big tree though. I’m still having trouble identifying it.

David, take an old oven mitt cut the thumb off to length, roll stitch the cut end neatly. BAM, Iron skillet handle pad. Slips on and off easy. Works great. I've made them from old pot holders also.

great vid. good way to cook breakfast. i cook every day with cast iron, at home, in my camper and over open campfires. to keep em seasoned use flaxseed oil and put back on the heat empty till it just starts to smoke then set aside and let it cool......and i do use soap when i clean. the legend of not using soap comes from when lye was in soap. dawn cleans and will not strip a properly seasoned cast iron pan.

I prefer lightweight non-stick cookware for all my cooking except on the hobo stove or for cornbread, steaks, etc.

Great video. You just made me hungry for breakfast lol. That little iron skillet is awesome, looks perfect for hobo stove. Coffee made with the grounds in the pot is good. I like coffee but coffee doesn’t like me, the acid bothers my stomach. I think boiling the coffee and letting it steep makes it less acidic imho.

good video dave. finally, seasoning a cast iron pan made easy. most utube video's are complicated and involve way more steps than you take. Your way of seasoning makes better sense. are you gonna have any more chow video's? now, I'm gonna have to do this outside if it ever warms up.

I still do the initial seasoning in the oven... coated in grease or oil, 200 degrees for a half hour. After that if I ruin the seasoning, I use 2 kinds of fats to bring it back. It might work for the initial seasoning too.

As the owner of a fairly new Lodge pan & lid set, your video caught my attention. I'd add that the smaller size is quicker to clean and -- if you're so inclined -- quicker to undo the rough factory seasoning. I've tried out little flatbreads as well as the usual fare -- coffee's a new one, though! After scraping sometimes you can avoid much water by using salt (coarse or table) with a paper towel or small plastic scrub pad to polish the seasoning back to a clean/smooth condition.

The good thing about about hobo stoves, besides how cheap they are to make, is that you dont need that much wood to cook or warm yourself. And I also noticed you have the expensive American version of skillet. The Ozark Trail 6 inch skillet made in China with a thinner handle, is like $5 at walmart.
