In this video I demonstrate how to cook pork belly adobo, a delicious signature dish of the Philippines.
This is improvised outdoor cooking using my fire bowl and a few bricks as an efficient wok station.

Is that lavender 🪻 at your lawn? Beautiful! Oh my...the pork belly, absolutely delicious looking. That's how we eat here too, pork belly with some rice. And of course some beer too. That's what a good stimulation is, I'm drooling! 👍🏼🤤

It's not lavender Fiona, it just turned up this year as a volunteer! I think it is salvia nemerosa. Thanks as always for your kind words and generosity of spirit my dear friend.

Its been hot here today too. I lost a mature rosemary to the harsh winter we had recently. I had to cut my bay back quite severely, i dried what I could but it broke my heart. It had grown so tall it was blocking precious evening light. Great impro re the wok, Roger would have loved that. great recipe too keep them coming

It's heartbreaking to lose a much-loved plant. My lovely Rocoto Montufar pepper didn't make it this year. Oh well, onwards and upwards. For some reason I can't quite fathom rosemary grows like mad in Rhyl, it may be the sandy soil. I'm raising a glass to Rog right now 🍺

I love this dish Pete, not cooked with belly pork so you have inspired me! As an aside my cousins lived in Rhos-on-Sea and we used to go for three weeks every summer in the 60s from Stockport . North Wales is lovely!

The belly pork is authentic to the original Filipino recipe Nige, and it is my preferred version. I love the way the fat and skin renders to a succulent meat jelly. Most westerners I have met prefer leaner meat eschewing those gelatinous textures. It is also quite good using turkey thigh meat. Yes North Wales is very beautiful!

San Miguel was a very popular beer in Hong Kong, they had a brewery up in the New Territories. I often cook green beans and spinach in a simple Farsi style, it's delicious! 😋

I'm a subscriber and have been for a few years now well probably more because I was watching your vlogs before COVID and you always get a 👍👍 up from me and I love pork belly and how you cooked yours looked amazing and delicious..but I retired when I was fifty and now I'm getting a bit of a pork belly now 😅

There are so many great Asian recipes for pork belly Maplecook, but this one is perhaps the simplest. The tang from the vinegar is what makes this dish pop 😋

Wow, what a beautiful bay plant! Is it difficult to grow? Rosemary is always good too, and I have that. Oh yes with the pork belly and skin on. Philippine cooking is honest and delicious. Very nice Hawaiian style shirt you got! Always like them. Love your backyard-charcoal-heat-set-up, very cool. Oh, San Miguel Beer! Yes, tasty and good call. What deliciousness in a bowl your served, Pete; excellent meal for certain! Just out of curiosity, what was the temperature for you all that day?

The bay laurel seems to love it there in that spot, it gets bathed in sunshine and it seems to weather the worst our Welsh climate can throw at it. It seems pretty drought-resistant too. I need to cut it back in the late summer before the savage winds come, but otherwise it's a low-maintenance plant that yields so much deliciousness. The fire bowl is such a versatile cooking range. Converting that unwieldy 28" homemade discada to a fire bowl was the right move!

@@RivetGardener Yes Rivet we usually catch the tail end of those North Atlantic storms, usually a day or two after the US/Canadian eastern seaboard. We all have heavy-tiled roofs here, yet we still get damage some years.
