How to Cook Scotch Pie

In this video I demonstrate how to cook scotch pies with a beef filling. Traditional scotch pies were made with mutton, but lamb and beef are more often used these days. Since Scotland is also well known in the culinary world for the quality of its beef, I have decided to run with a beef filling in this pie.
Makes 5 or 6 x 7.6cm/3" pies.
Ingredients:
Pastry:
300g plain/all purpose flour.
67g lard or vegetable shortening like Trex or Crisco.
120g water.
A pinch of salt.

Meat filling:
300g minced/ground beef 612% fat.
2 tspns salt.
2 tspns black pepper.
Pinch of ground nutmeg or mace.
8 tbspns beef gravy.
Onion gravy:
1 tbspn oil.
1/2 onion finely chopped.
2 tbspns flour.
400ml beef stock.
Method:

Hi Pete, To someone who's never made a scotch pie before, from someone who's made thousands over the years "That was a terrific result. They were beautiful. The reason we leave the cases to set, it's because we make the paste wetter, so the machine handles it better, so then it has to dry out. Not a criticism, but if you bring your fat, water and salt up to boil you get a much crispier crust, that goes for pork pies too. I loved it Pete Thank you

Thanks for this recipe... Takes me back when I visited Glasgow in the 80s with my late friend took us to this boozer we had Scotch pie, Chips, mushy peas and gravy served with a pint..... One off the tastiest meals eaten... Thanks once again for the memory

Hahaha thanks Patrick, I have been prevaricating for months about trying this recipe, years even! I'm glad I gave it a go now. The Scottish are a rather precise people and they like things a certain way, and rightly so. Mine are not the best scotch pies I have ever tasted, but they are close. I'm very happy with the way they turned out.

Thanks Fiona. Coming from you that is a great compliment! The green side dish is called Mushy Peas, made from green marrowfat peas which are first hulled and dried, then soaked with soda before boiling. We usually buy them canned these days, but it is still possible to buy them dried in packets with a soda tablet for soaking. Mushy peas are essential for fish & chips. In my home city of Nottingham, England we eat the peas with mint sauce as a street food snack. Peas like this were an essential part of the Royal Navy rations issued to sailors in the tall ships of the 17th, 18th and 19th centuries, they received two pounds of salt pork or beef per day and a half pint of dried peas along with their daily ration of 1/2 pint of rum. Ironically they would complain when fresh rations were issued in lieu of dried peas - typical British!

@@gracioustreatz7231 I think there may be green split peas where you live Fiona, usually in the Indian stores. You can soak them overnight in water with a teaspoon of baking soda to get an almost identical result. You then boil them down to the same consistency as in my picture.

Pete forgot to tell you that once the dried peas have soaked and plumped up (I leave mine soaking overnight) Rinse them thoroughly with water or they will not taste good, they have to be rinsed well ... Yes David, he is a peck o' nails that lad! He is the son of an ex British army soldier and one of the founders of the modern MMA movement. He is basically hard enough to roller skate on! I had a nodding acquaintance with the martial arts myself, my late father ran a kempo dojo in the early sixties - long before martial arts made a major impact in the West.

Not always Kozzae. I do know that mutton would have been used traditionally, but lamb is often used these days instead. I did a lot of research and beef scotch pies are also judged in the national scotch pie championships. Anyway Scotland is much more famed for the quality of its beef, so I chose to run with beef. I must add that the majority of scotch pies I have personally had were made of lamb. I think it is more common to use lamb, but it is by no means exclusively so. Hi Pete, these look fantastic! I've nailed the crust (easy part) and the filling seasoning, but cannot figure out how to get the traditional texture of the filling. I see some of the larger companies that ship online are using so many ingredients such as bread crumbs, corn flour, corn starch, eggs, etc.. even molasses and other unnecessary ingredients. I'm assuming the traditional butcher shops aren't doing this. Is the gravy the secret? I've use gravy and it still has the same firm, compact, almost burger-like consistency rather that the loose, moist texture that i'm familiar with from the traditional pies my Scottish grandmother use to bring here to the US from Edinburg. Thanks again for your vid, it was great!

All the commercially available pies have too much filler in them for my taste, rather like cheap banger sausages. I know the texture you mean, that comes from the gravy and the rusk filler. Panko breadcrumbs make a great rusk filler. Many scotch pies use ground lamb instead of beef, maybe that is the texture you seek.

I made this video in May 2020 so I can't be sure, nevertheless I can take an educated guess at 20% fat, because that would be my choice if I were to make this video today. If the meat is too lean you get a chewy texture, not the desired end result. Commercial pies are often packed out with varying percentages of wheat rusk.

Of all my recipes, this is the one of which I am most proud Scott; it took me a lot of research to get it right. If you follow my recipe you should get it right. You can use mutton, lamb, beef or venison. Or you can use any mixture of these.

I watched an old video about a scotch pie competition made by Scottish butchers, and they said that mutton, lamb or beef can be used. I didn't know about the east coast and west coast though. Thanks for the clarification!

Nice video. Traditional Scotch pies are made with minced lamb not beef but I'm sure you know this. Look mint all the same.

Traditional scotch pies were made with mutton, in fact I mention this in the video at 1:00 . Modern scotch pies are made with either beef or lamb. Mutton is not widely available these days, except from Halal and certain specialist butchers. I'm very happy with the way these turned out, thanks Kevin.

Can't beat a good Scotch Pie. I prefer mine without gravy. Same as Haggis, can't do gravy on great food.

@@LazyCookPete Yep these two fillings are Popular up in Scotland ..the same classic hot water pastry shell But filled with Chicken curry or Macaroni Cheese ..The macaroni Pies have No Lid on them .

@@dec-hw3lm I love this! The cuisine of any nation should never be fixed, it should always be mutable. We keep the best of each generation's changes and on it marches through time. Scotland is spoilt for great ingredients, with some of the finest beef anywhere in the world to Tobermory trout, Loch Fyne seafood and Finnan Haddie. You can tell I'm a seafood lover!

I've heard of pies with beef & ale and pudding with brandy but never Scotch in a meat pie. I suppose the rich folk like to go one better. Aye.

traditional scotch pies are made with mutton/lamb and WHITE pepper not black - your pastry will be better if you bring your water/lard up to boiling point and once pastry is in molds should be left overnight to dry out - from a real scots baker
