I think its cuz of osmosis or diffusion. One or both of those. Basically the skin of the cherry acts as a one way transport system for the alcohol to enter it, but leaving no means of cherry essence to escape. I think

@@freebasequeen Eastern Europe usually use do it this way: tart cherry, sugar, orange peel and clear liquor (grape Brandy or plum brandy). They would leave cherry in brandy for few months and they would shake it up Evey week to get the sugar dissolve. But they don't ever mush cherry because you would have alot of nasty floaties. Cherry would soak up alot of brandy which eating 10 cherrys later is like taking 5 shots. It's truly amazing.

Funner fact,: Maraschino cherries used to be soaked in Maraschino liquor, but in America when prohibition started they began preserving them in sugar. These days cherries are soaked in a variety of chemicals until they are bleached white then the color is artificialy put back in and they are preserved in a sugar mixture... "Maraschino" cherries these days are basically embalmed.

I live in Michigan and when I make my special whiskey I sell I take a razor and slice the outside of the cherries but leave them whole, people love to eat them whole but a small slice makes a beautiful red color and an incredible taste

I like your videos! Thank you for the many ideas. From my experience, fill a jar half or 3/4 with sour cherrys or red currants and then doppelkorn or vodka to the top. Make sure that the fruits don't touch the air, and after 1 year take the fruits out and round up the drink with a solution out of water and rock sugar how you like it. I also made it with apples, plums and pears but the first 2 are the most liked:)

Bars used to have giant jars of whiskey wild turkey with cherries full to the top. They sold the cherries individually. It was a money maker. Age 71. It kind of faded away in the early 70s.

From what I’ve read cherry pits contain arsenic and the alcohol can leach that out. Better to remove the pits and stems. I’ve done this a few times when cherries aren’t in season and Evan Williams bib works very well!

In Italy, more specific in province of Piacenza, we have "vissole", they are cherries put in a jar full of alcool.. after few months the alcool takes the sweet taste of the cherries and they become an explosion of alcool.. perfect after a big lunch!

You should do a german 'Rumtopf'. A big jar filled with fruits and rum. You start with strawberries and every time another sort of fruit (all sort of berries, cherries etc.) is ripe you put some in there and fill up with rum. Last one are plums in autumn. And then you wait until Christmas. Bone-Apple-Teeth!

In italy exist a thing called grappa, you leave the flavor (Normally fresh ingredient, to give more flavor) infused in 95% alcohol water and sugar, for up to 6 months (more infusion more flavor). Cherry grappa is famous but my favorite is my personal creation: mentha rotundifolia and licorice root, a gift from the gods

De-stem next time too. Slice them in half, or just pit the cherries beforehand and it’ll open up enough of the flesh for better infusion. At my work we make a smoked cherry, blackberry, vanilla bourbon and people LOVE it.

If you take the pits out then heat the cherries until they release their juice, then add them to the alcohol and let them sit, then you should get a cherry flavor explosion.

What we do in our country is we leave sour cherries sealed in a jar with some white alcohol for 60 days in a dark place. Please note that the stems should be plucked out, because they tent to make the spirit sour. Try it out if you think that life is too short. Thanks!

I used to have a neighbour who put maraschino cherries in vodka for a year,every year,to serve on New Year’s Eve. Those cherries were so good! I babysat for them,so sometimes helped myself to a few cherries. (It was a huge jar!)

To get a more complete macerating to cherries, I recommend: wash and stem the cherries. Slice and halve the cherries, then remove the pits, and discard the pits. Cherry pits are packed with arsenic compounds. The pits have an opportunity to leach into your macerating spirit. Stems have little positive to contribute but astringency. God luck on your next laceration experiment!

Sugar the cherries and leave to ferment for a month then pour in the whiskey and leave for another month. Got this recipe from someone who called it cherry bounce. The whiskey became like a cherry syrup and the cherries looked mummified and you take them out and freeze and then just take some to suck on. It was delicious
