I think the sound that the mask produced at 13:30 is from the step up conversion circuit. The glowing wires need high voltage which is usually produced by pulsed dc or ac, which in turn can (at the right frequency) be heard due to induction causing vibrations.

18:40 ok so, thing is, the parts needed to make a microphone are dirt cheap. You can use the exact same parts as famously great microphones and build a microphone for like 30 dollars. DIY perks made a video where he built one with an integrated soundcard. Mostly, bad mic quality is because of tiny capsules. Try using a guitar hero or rockband mic from like PS3. The quality is actually good.
