LAVASH ENVELOPES / QUICK BREAKFAST

I offer you crispy lavash envelopes with a delicious filling. You can use absolutely any ingredients for the filling: cheese/herbs, mashed potatoes/onions, mushrooms/onions, cottage cheese/raisins, chicken/cheese. There are plenty of variations, choose according to your taste or ingredient availability.
I will be making envelopes with sausage and cheese. For the envelope with sausage and cheese filling, we need the following ingredients:
Thin lavash - 1 pack
Hard cheese - 100 g
Cooked sausage - 250 g
Tomato - 1 piece
Mayonnaise - 2 tablespoons
Dice the sausage into small cubes.
Grate the cheese on a coarse grater.
Dice the tomato into small cubes.
Mix all the ingredients in a bowl.
Cut the lavash into strips. It's easiest to do this with scissors.
You can start forming the envelopes. Spread mayonnaise on the edge of the strip and put the filling, slightly shifting it to one edge. Fold into a triangle until the lavash runs out. You can make fewer layers and stop when all the filling is inside. Then the layer of dough will be small, and the envelopes will be even more delicious.
You can wrap not only with an envelope but also with a rectangle or a roll, whichever is convenient for you.
Fry the envelopes in vegetable oil over low heat.
After the envelopes are golden brown on one side, flip them over and cook until done. I fried them for about three minutes on each side. You can fry the envelopes without oil on a grill pan. Or dip them first in beaten egg and then fry in oil.
The envelopes turn out very tasty and crispy.
