Mandriky is a traditional Ukrainian cookie with a filling of sour milk cheese and poppy seeds. It was prepared for the church holiday of Peter and Paul, July 12. Over time, these delicacies began to be prepared for no particular reason, but simply for tea and coffee. And the recipe has been modernized. Instead of cheese, jam or jam is now added to mandriks and the biscuit shape is made open. We offer the canonical recipe for mandriks to feel the authentic essence of this pastry. You will not mess with the dough for a long time - it is sandy and does not require special cooking techniques.
Ingredients for mandriks (shortbread):
600 g of wheat flour
3 eggs
200 g butter 82.5%
1 Art. l. sugar
½ tsp. salt
100 g sour cream 20%
Ingredients for the filling:
400 g of sour milk cheese 9%
100 g sour cream 20%
1 egg (+1 egg yolk for greasing)
2 Art. l. sugar
1 Art. l. the poppy
A step-by-step recipe for cooking mandriks
Take the butter out of the refrigerator in advance so that it becomes room temperature and softens.
Make shortbread. Pour 600 g of wheat flour into a deep bowl, add 200 g of softened butter 82.5%, beat 3 eggs, add ½ tsp. salt, 1 tbsp. l. sugar and 100 g sour cream 20%. Knead the dough. If desired, use a food processor with a hook attachment.
Make a ball out of the dough, wrap it in cling film and put it in the fridge to rest for 20 minutes. Turn on the oven to heat up to 180 degrees.
Make the filling. Put 400 g of 9% sour milk cheese in a deep bowl, pour 2 tbsp. l. sugar, beat 1 egg and add 1 tbsp. l. the poppy Mix thoroughly so that all the ingredients are evenly distributed.
Take the dough out of the refrigerator, roll out a layer 4 mm thick. Cut circles with a large glass, 8 cm in diameter.
Put the sour milk cheese and poppy seed filling on one part of the circles. And cover with other circles and carefully seal them with your fingers so that there are no holes.
Line a baking sheet with parchment paper and place cookies on it.
Beat one egg yolk with a fork in a small bowl and brush the cookies with a pastry brush.
Bake at 180 degrees for 30 minutes.
