Actually, you're forgetting one more thing. You can use air whipped into ice cream to make crystals smaller but the best way to ensure the smallest size crystals is the speed of reaching freezing temperature. The faster you can freeze a liquid the smaller the ice crystals. Thats why dippin dots (uses liquid nitrogen) is surprisingly smooth and creamy. And thats also how the rolled ice cream doesn't taste like just pure ice, the cream is spread thin enough that it freezes very quickly.

I totally understand that point about how first hand experience can truly change your perspective and opinion on things in life. Like I remember I did some waitressing in a fancy restaurant for a few months during my first year of Uni, and unfortunately my colleagues were toxic asf apart from this one kind girl I acquainted with made the job bearable. Anyway, the experience of doing this helped me respect the amount of BS and hard work people in every customer service job in food and beverage, retail and so on go through everyday. So I raise my glass to everyone of you in a customer service job, or just any job, it's not easy sometimes, so remember to be kind to and take care yourself and spread that to others when no one else might be kind especially on the harder days ♡

What I got from this is there's a whole network of ice cream maker friends / collaborators, which is so cute! Btw, random ramble --- rolled ice cream was a staple of my childhood in Asia :) I see sooo many "American" food trends from my childhood not credited to Asia and I'm glad when I went on Wiki, it does acknowledge rolled ice cream is from Thailand (although I'm not from there). Like not to get nationalistic about food which is for the whole human race, but it's nice and nostalgic haha 😵😵🌀

I just had rolled ice cream for the first time a few days ago and it was awesome! I got chocolate peanut butter brownie and it was one of the best things I’ve ever had!

I had rolled ice cream once when a vendor was selling it at a local fair. It was pretty good. The texture reminded me of the thin layer of cream that sticks to the walls of a smaller ice cream machine

I’ve had rolled ice cream twice and I quite enjoyed it. I find regular ice cream quite thick and I like air between the layers in rolled ice cream. I find myself enjoying the experience more. I also like all the topping you can get with rolled ice cream and how the toppings can be added actually inside of the ice cream to make new flavours.

I just paid 850 for a small at the boardwalk. I don't know about your thoughts but it was arguably the best dessert I ever had. It might not be as fluffy as real ice cream but it tastes more natural almost and fresher. Just all around an awesome experience
