Well when someone says spicy food, you automatically think India as in general their food is spicy af. Also the whitewashed restaurants around don't count as they don't replicate the flavour properly and cater to people that eat less spice.

Having lived in both india and the west, I can tell you its the other way around. Where white people dont know how to make flavorful food when their staples are like, mac n cheese or fries or steak, all of which are pretty bland and need to be complemented with something. And since they cant handle flavor, they dump chilli powder and garam masala into everything. Even the curries meant to be sweet or creamy feel like all they did was dump some condensed milk into it and call it a day. White people dont understand flavor in cooking. They only understand procedure. You're a better cook in the west based purely on you not overdoing the eggs or toasting the bread enough or not burning the meat. Not in the least bit for how creative you are with the flavoring of the dish
