Both, the A350 and the 787 fuselages are assembled from segments. The big difference is how the segments are built. Boeing is winding up carbon fibers on a mandrel and a segment is produced as one monolithic single piece. They are highly integrated and therefore some of the most complex composite parts. Due to the size and the manufacturing method they have control over the inner mold layer, but it's challenging to bake the large composite parts to exact tolerances. A lot of expansive post processing is required to get the segments into tolerance. Airbus on the contrary is building the fuselage segment by mounting together 4 composite panels and they use formers and stiffeners. Airbus can adjust the panels to exact tolerances during the assembling process. Hence the A350 fuselage segments join together perfectly without gaps while Boeing is fighting with imperfections and small gaps in the joints. Another point is Airbus can replace two of the four panels of a fuselage segment to add a large freight door into the fuselage, while Boing has to somehow put a huge opening into a 787 fuselage segment to install a freight door. The result is obvious, there will be an A350 freighter, but right now there is no 787 freighter due to the challenges of the creating the opening for the freight door into a large composite structure. It's not possible to simple cut a hole into a 787 composite fuselage segment. Bottom line the 787 fuselage is built from some of the worlds most complex, expansive composite parts. The A350 fuselage parts are less complex, but therefore easier, more economic to build and to assemble. The Airbus concept also allows for easier adaptations like a freighter version. It looks like Airbus got it right and Boeing went too far with the complexity of the composite parts. The aluminum fuselage of the 777X is another indicator, that the huge fuselage segments needed would be difficult to produce as monolithic composite parts if the 787 technology got upscaled to the 777X size. Boeing had to redevelop a similar technology like Airbus is using for the A350 fuselage to produce a 777X composite fuselage at reasonable cost, but there was no time nor money to do it.
