If you think of Polish cuisine, you immediately think of the rich and aromatic soup zhurek. Each Polish region has its own differences. It is prepared with white sausages or ribs, served with crackers, a hard-boiled egg or fresh herbs. There are also different ways of preparing sourdough - with rye flour or bread. Our Polish zhurek will be with smoked pork ribs, sausage and sour cream. Yummy!

Preparation time: 25 minutes
Cooking time: 35 minutes
Ingredients for sourdough:
100 g of rye flour
400 ml of water
juice of ½ lemon
Ingredients for Zhurek:
2 liters of water
4-5 potatoes
2 onions
1/3 celery
1 carrot
300 g of smoked ribs
200 g of boiled and smoked sausage
100 ml of sour cream
2 Art. l. oil
2 cloves of garlic
2 bay leaves
salt and pepper to taste
A step-by-step recipe for making Zhurek
For the broth, pour 2 liters of water into a saucepan and add vegetables cut into arbitrary pieces: 1/3 celery, 1 carrot and 1 onion. Add 2 bay leaves, a little salt and cook for 20 minutes on medium heat.
Cut the potatoes into medium cubes. When the broth is ready, add it to the pot with the vegetables.
Make a roast. Cut the second onion into small cubes. Crush 2 cloves of garlic with the flat side of a knife blade. Cut 300 g of smoked ribs into segments, and cut 200 g of boiled and smoked sausage into small cubes with a side of about 1 cm. Heat a pan with 2 tbsp. l. oil and put onion, garlic, ribs and sausage. Fry until the onion becomes soft.
For leavening, pour 100 g of rye flour into a bowl and pour 400 ml of water. Squeeze the juice of ½ lemon. Mix thoroughly with a whisk so that there are no lumps. For now, set aside the leaven.
Remove pieces of carrot, onion and celery from the broth, they have already given their flavors. Transfer the roast to the pan.
When the broth boils, add leaven to it. Mix well so that no lumps form.
Add 100 ml of sour cream to the saucepan and mix again. Taste the zhurek and add more salt and freshly ground black pepper if necessary. Serve the soup warm with crackers or a boiled egg.
