This is not the way wooden boats are "generally" sealed. Wooden boats are caulked with a special stranded cotton fiber tightly packed between the planks and all around the sims with a caulking iron and mallet. then sealed with a compound. When the boat goes on the water, the planks swell and tighten. This provides a flexible connection between the planks allowing them to move, shrink, and swell while maintaining the integrity of the hull. it is very labor intensive, but it's the long-standing way since the Vikings set sail in the open sea.

I don't think they'll show that in the video. I assure you that the shipwright I know has sustained some sort of injury with appropriate working clothes and in a safe working environment.
