To make stuffed peppers:
Rice - 100 g
Minced meat - 500 g
Carrots - 1 pc.
Onions - 2 pcs. (medium in size)
Garlic - 2 cloves
Pepper - 8-10 pcs.
Water - 100 g
Tomato juice - 400 g (add a little sugar to balance the acidity of the tomato juice)
Salt to taste
Ground black pepper - to taste
Bay leaf - 1 pc.
1. Pour rice with water and boil until half cooked. For 1 part of rice, I add 2 parts of water and cook for 10 minutes after boiling.
2. Grate the carrots. Finely chop the onion. Chop 2 garlic cloves.
3. Fry the onion in vegetable oil until transparent. Add carrots, garlic. Fry everything together for another 2-3 minutes.
4. Remove the core of the pepper, remove the seeds from the inside.
5. Stir the minced meat, vegetables and boiled rice. Add salt and pepper to taste. Add water and mix well again.
6. Stuff the peppers. Place the peppers in a saucepan.
7. Salt the tomato juice to taste, I also advise you to add a little sugar to taste to balance the acidity of the tomato juice.
8. Pour tomato juice over the peppers. Put the bay leaf. Cover and simmer over low heat for 40-50 minutes until the pepper is completely soft.
