Gina, another use for your garlic scapes is to puree them, then blend them with butter to your preferred consistency, press into a thin layer (1/4 inch) in a parchment paper lined pan, slice into small squares and freeze. This garlic butter can be used in any cooking, or garlic bread, etc.

I'd like to share a couple of things: you could dangle the cleaned bottles from tree limbs, making a wind chime, also, please be selective when cutting down the smaller spindly looking trees, you don't want to cut down a walnut, hickory, or hazelnut by mistake, the wild life will appreciate it. You said that your local gas company doesn't have off road diesel, but can you contact a farmers dealer near the off grid property that can deliver some for you and purchase a tank to store it in? You can get a discount on it because you are a homesteader! Plus you can get regular fuel at the same discount price. Just a suggestion. Great job and I look forward to seeing more progress. Bill

Your before and after shots of the container cabin yard made me think of all the before and after shots you are probably going to be doing of the main pasture and house area. I bet it would be helpful to set aside maybe a staked point or points to take the before and after shots up there from, so they will be all from the exact same perspective. @StoneKathryn

Some have suggested to use the big rocks as a wall to hold in a gravel leveled off area off the back of the contained as a picnic area and have a fire pit in the middle area. I think that would look cool. It would drain well and the fire pit would be isolated from any plant material. It would be raised so stepping down to the area from the cabin would be easier. I have no idea what they will do. Using those huge rocks around the picnic area would be great whatever they decide.

If I may suggest some ideas for the cabin, what about taking large boulders outlining a patio area out the sliding doors, filling that in and maybe pavers or just packed gravel for a sitting area with the firepit or stone fireplace on the outer edge. Do a covered patio over about 2/3 rds of that, but not out to the firepit or fireplace. The covered patio will allow more usage during winter also. If you do the the boulders be sure and make steps in a couple areas. It's looking great.
