Cake in a pan
🍰 Pan Cakes
200 g rice flour (non-extruded (❗️), 7 oz)
200 ml milk (6.6 fl.oz)
150 g eggs (3 eggs)
80 g sugar (2.8 oz)
40 g of butter (1/4 oz)
5 g baking powder (1 tsp spoonful)
🍰 Prepare the cakes in a pan.
1. Mix the rice flour with the baking powder, add the milk and mix.
❗️ It is important to use non-extruded rice flour specifically.
2. Add yolks and hot melted butter, mix until smooth.
3. Whisk the whites until they are fluffy, add the sugar in small portions, and whisk until stiff peaks.
4. Combine the base with the beaten egg whites.
5. Place several ladles of batter on a heated frying pan, fry the crust on both sides for a few minutes each.
6. Fry three more pie crusts, let them cool.
7. Line the crusts with an 18cm ring.
🍦 Cream of Puff pastry.
300 ml milk (10 fl.oz)
60 g egg yolks (3 pcs.)
25 g cornstarch (1 oz)
vanilla sugar or vanilla bean
60 g sugar (2 oz)
100 g butter (3.6 oz, cold)
200 ml cream (6.7 fl.oz, 30%)
🍦 Prepare the cream "Plombard".
1. Mix milk and vanilla or vanilla sugar, warm it up.
2. Mix yolks and sugar, add cornstarch, stir.
3. Mix 1/2 of the hot milk with the mass of yolks, sugar and starch, then return the resulting mixture to the saucepan.
4. Boil the cream, stirring constantly: the mass should boil and simmer for 1 minute.
5. Transfer the cream to a bowl, add the butter and stir.
6. Cover with cling film, put it in the fridge for 1 hour.
7. Crumble the cooled cream and add the whipped cream to soft peaks. Stir.
Syrup for the soaking:
250 ml water (8.3 fl.oz)
130 g sugar (4.6 oz)
Prepare the syrup.
Mix the water with the sugar, bring to a boil and cool.
🍰 Assemble the cake.
1. Place a bottomless mould with a diameter of 18 cm and a height of 6 cm on a plate.
2. Put the cake on the bottom, drizzle the syrup over it and spread the cream. Put the second cake on top and repeat with all the cake.
3. Pipe the cream onto the top of the cake, remove the cake pan and cover the sides with the cream.
4. Place the cake in the fridge for a few hours.
5. Decorate the cake with almond slices.
