Today we will go to the village and prepare three types of cheese from homemade milk.
🧀 Let's start with Mozzarella.
Ingredients:
-Milk - 4 liters;
- Vinegar 9% - 8-10 tablespoons;
-Salt.
Heat the milk to 122°F and gradually add the vinegar, stirring constantly.
Squeeze excess whey from the cheese and heat it to 158°F. We put the cheese in hot whey and form 2 balls. We put them in ice water for 10 minutes, and then in salt water for 2 hours. We store the cheese in the refrigerator in whey.
🧀 Smoked cheese at home.
Ingredients:
-Milk - 3 liters.
- Vinegar 9% - 75 milliliters;
- Salt - 200 grams;
- Water-1 liter.
Heat the milk to 122°F and gradually add the vinegar, stirring constantly.
Squeeze excess whey from the cheese and heat it to 158°F. Put the cheese in hot whey, stretch and twist it many times. Put the mass in a mold and stabilize the cheese in cold water for 10 minutes. After that, put the cheese in salted water for 1 hour. Smoke the cheese using the cold smoking method for 10 hours on fruit sawdust.
🧀 Homemade hard cheese from milk.
Ingredients:
- Sour milk cheese - 2 kilograms;
- Butter - 200 grams;
- Egg - 2 pieces;
-Milk - 2 liters;
- Soda - 2 teaspoons;
-Salt.
We put sour milk cheese in a pan and pour milk.
Heat the milk to 122°F and strain. Add salt, eggs to the cheese and mix well. We put it on a slow fire and add butter. Mix and add soda. After one minute, put it in a cheese mold that has been greased with oil in advance. Cool and cut. Bon appetit.
