I agree. But I always wonder why the kitchen floors are always so rough and dirty, unlike the rest of the restaurant floor, maybe not given much attention because is not seen as much?

@@pauloseibert I saw one video of a Japanese restaurant like this that had a narrow, covered drain running the full length down the work area. So maybe they power wash it after service. It is certainly disconcerting to see them splash water around with great abandon…😆

What you ignore is that what you call street food is delivered in a busy city, constant customers, constant flow. This video is of a small time village, only a few customers per hour, so obviously there's more time to prepare and care for the food. Then agian: Das ist wie ne anständige Semmel vom Metzger.
