Dumplings with cheese - one of the most popular dishes in Syrup Week, or Shrovetide. Although we used to make pancakes, I learned that dumplings were considered more traditional for this holiday. So keep the recipe for dumplings. I decided to choose custard, it is softer. And the filling for dumplings - cottage cheese and poppy seeds. Very, very tasty!
We prepare dumplings:
Portions: 40-50 pcs.
Preparation time: 45 minutes
Cooking time: 5 minutes
Ingredients for custard:
500 g of flour
250 g of hot water
4 st. l. sunflower oil
½ tsp. salt
1 pinch of sugar
Stuffing for dumplings:
500 g of cottage cheese
1 egg
5 st. l. poppy seeds (+1 tablespoon sugar)
2 st. l. sugar
Ingredients for the sauce:
2-3 tbsp. l. cream
2-3 tbsp. l. condensed milk

Recipe for dumplings with cheese
Prepare the ingredients for making dumplings with cottage cheese and poppy seeds.
I decided to make custard and did not use an egg, so the dough turns out softer. If you want, you can add 1 egg, then the dough will be more elastic. Heat 250 ml of water in a saucepan until steam appears, up to 70-80 degrees.
Pour 500 g of flour into the bowl of the combine, add hot water, ½ tsp. salt and a pinch of sugar.
Add 4 tbsp. l. sunflower oil and put to mix with a nozzle-hook. You can knead the dough without a combine. First, mix the ingredients with a spoon, and when the dough has cooled a bit, continue with your hands.
Knead the finished dough a little with your hands, wrap in cling film and refrigerate for 20-30 minutes.
We prepare stuffing for dumplings. Mix 5 tbsp. l. poppy seeds with 1 tbsp. l. sugar. Grind in a grinder, coffee grinder or just in a mortar. So the poppy will grind better.
Combine grated poppy seeds with 500 g of cheese. I have 9% cottage cheese, but you can take any other.
Add to the filling 2 tbsp. sugar and beat 1 egg.
Thoroughly grind the filling with a fork until smooth.
Remove the dough from the refrigerator and roll it into a layer 1-2 mm thick.
Using a glass or any other object, make dough circles.
Spread the filling on one edge, wrap the other edge. Form all the dumplings this way. If desired, make a beautiful pattern in the form of a braid on the edges.
How to cook dumplings.
Boil dumplings with cheese in boiling water 3-5 after boiling.
For the sauce, combine in a bowl 2-3 tbsp. l. sour cream and 2-3 tbsp. l. condensed milk. Stir a little and pour over the finished dumplings. Or you can leave the sauce in a bowl and soak the dumplings.
Rub a little lemon zest on top for freshness and citrus flavor. But it is optional.
