I cooked my fillets for 15mins on 400, but still no color like yours. Maybe mine were too wet? I added some orange juice and hot sauce, could be why.

This looks amazing, I love roasted potatoes with meat so much! I’ll be making it very soon. But I’ll be passing on using a knife that large lol my jaw dropped when I first saw it, I’d loose my fingers (completely cool if anyone else uses a knife like that though)
