7/4 is actually quite a common time signature in country music, however it's often hard to spot as it's 'hidden' behind cut time (ie double time). Check out "All Fall Down" by Shane Worley, "Short Sweet Ride" by Alan Jackson for starters. They sound like they're in 4/4 half-time or 4/4 cut time, but when you start counting beats ('measures' as they call them state-side) you realise something odd is going on. However, this 'odd' meter sounds 'right' for that format of music, it's almost expected.

I mean, there's only so many chord progressions and harmonies. Once you're in a key you're pretty much building your harmonies around 5 main notes. For any one song you could find a hundred that sound similar when you play them side by side.

Honestly, as a pretty insufferable "music guy" I find myself surprisingly intrigued by some of the stuff she's sung. I haven't looked into how much production or writing she puts into it, but even though it is extremely poppy I liked that "wait a minute" song, even if it is overplayed.

The one that comes to mind for me is "Diary of a Madman" from the second Ozzy Osbourne solo album featuring the late, great Randy Rhoads. 7 count for the verses, 6/8 for the ends of each verse, and 17 count at the end of the song, maybe two measures of 6/8 followed by one of 5/8?

This is more alternative and jazzy than pop. This is the type of composition students come up with after their 5-th jazz lesson. They get too excited about odd time signatures and chord extensions and go 7/4 with 7th, 9th, 11th on every chord, if possible. There's got to be something you're genuinely more excited about than this crooning about shallow nonsense in 7/4

Also, 6/8 songs are overall just typically faster. It could also be said that 3/4 is seen as three beats with a twin subdivision, and 6/8 is seen as two beats with a triplet subdivision.
