Yeah these ones are frozen with nitrogen first, so they can be completely dunked in a batter of flour and whatever else (milk, egg, etc) and then deep fried. They remain structurally sound because of the nitrogen freeze, and the batter can be wet, versus dry, which is done to cut the fry time, so the ice cream doesn’t melt too much. Not so much of a concern with nitro freeze ice cream.

I have made deep fried ice cream in a Mexican restaurant. We hard froze a ball of ice cream then coated in cinnamon and crushed corn flakes. It then goes back in the freezer to get very hard. To serve you deep fry just long enough to crisp up the coating and put it in a flan cup, put on a generous amount of honey or chocolate if you prefer and top with whipped cream.

A lot of Tex-Mex restaurants do sell fried ice cream- many cover the ice cream with corn flakes before frying, then serve with strawberry and/or chocolate sauce. And regular Twinkies are baked, not fried. The pans are likely coated with spray. There's a "How they are made" type videos showing the process including the injection of the filling 😀

Fried ice cream (One of my favorite desserts!) is a fairly common staple in Asian restaurants in the US. Fried cheesecake less so but you can also sometimes see it on menus of US Asian restaurants. I’m aware a lot of our ethnic restaurant dishes are US inventions but I was a little surprised the fried ice cream is apparently not really a Japanese invention. I know you guys are very familiar with Asian cuisine so I guess it’s really a Japanese American and Thai American thing. (A lot of our restaurants also mix Thai and Japanese.) As far of the rest of the stuff you tried, that’s exclusively fair/street festival stuff and more a curiosity for us too than something we regularly eat or seek out. I tried fried Oreos at a street festival ONCE out of pure curiosity. I didn’t like it; too soggy! You are right: it’s a texture thing. Thank you for satisfying my mild curiosity about fried s’mores and key lime pie! (I don’t like Twinkies.) Now I don’t have to!

I'd like to see these two eat their way through the Texas Renaissance Festival. If they think the turkey legs here at the Houston rodeo are huge, they ain't seen nothing yet. And there's a dessert stand at the Texas Ren-Fair that serves fresh fruit kabobs dipped in chocolate as well as huge slices of FROZEN cheese cake--ON A STICK--that's also dipped into chocolate. You eat it kind of the way you'd eat a Häagen-Dazs bar. It's quite something!

A lot of restaurants sell a variation on the fried ice cream theme. I've seen them rolled in corn flakes, rice krispies, and battered. (I do not recommend any that they coated in cereal first then froze because the coating absorbes too much moisture so that when it's fried the coating trades it's original crispy texture for a stale, fried cereal texture.)
