Common hogweed is an ubiquitous hedgerow and roadside plant in the UK, it is also a great food source. The tender young stalks have a long season from February to September and they are delicious served similar to asparagus or as a Chinese style green vegetable in oyster sauce as I demonstrate here.
Mature plants can be cut back to encourage new growth of the tender shoots. The tight flower buds later in the season can be prepared and served just as you would do broccoli florets. Finally the seeds can be dried and used as a substitute for cardamom, because they have a very similar flavour and aroma.
Caveat:
Always make positive identification of wild plants and fungi using an authoritative source. If in doubt, leave it out!

There's lots of good bush tucker in Australia Daz. One of my great heroes was the Bush Tucker Man, I loved that show.

Hi Reza. I just steamed the shoots for two minutes in water then added butter and tossed the shoots for another minute in the retiring heat of the pan. I dressed it simply with Thai oyster sauce in the Cantonese style. I love garlic but in this case it would detract from the delicate cardamom-like flavour of the hogweed shoots. I may try it in garlic butter though, cos I'm mad for garlic 😋
