For those who are saying you are over cooking the chicken: You have to just sear the chicken breast first on high heat and undercook it, then you finish it off in the pan when you simmer it for 10 min
@BlueZirnitra
@BlueZirnitra 2 роки тому
Yeah there is no way those fat breasts were cooked through after a moderate sear on each side. No different to how cooking a steak works, searing it doesn't cook the middle unless you really overdo it. No one wants a medium rare chicken breast.
@gamersrevenge6528
@gamersrevenge6528 2 роки тому
@@BlueZirnitra ya im just seeing comments on how the chicken is overcooked and I fear people aren't giving it the high heat and the sear quickly enough so it just ends up being almost fully cooked
@BlueZirnitra
@BlueZirnitra 2 роки тому
@@gamersrevenge6528 sadly quite common I think. A lot of people are afraid of high heat because they think it will burn but low temp cooking is how you end up with flavourless, rubbery food.
@Eduardo-ji1eh
@Eduardo-ji1eh 2 роки тому
@@BlueZirnitra well she didn’t seat at very high heat either… that’s why she left it around 5 min each side. I could tell by the color after that amount of time as well as the olive oil and butter not burning(they have a pretty low smoke point). Even if it’s almost fully cooked it’s normal, that’s why she finishes it off in the sauce on a low simmer. That will guarantee it finishes cooking but still stays juicy.
@BlueZirnitra
@BlueZirnitra 2 роки тому
@@Eduardo-ji1eh it wasn't a low heat, otherwise she wouldn't have got such a good result. You don't want to sear chicken breast on full burner so a good strong medium heat is what you want. What you don't want is to poach the chicken in its own juices and get no colour at all, which is a problem a lot of amateur cooks have because sizzling scares them. We all understand why she simmered the meat in the sauce.

then that's not it. Sometimes less is better. Take your chicken cover it in flour, then cook it in olive oil and some butter if you want, and a twig of rosemary if you want. add a little bit more flour in the pan while cooking, salt and pepper if you want. Much easier and you're gonna feel the whole tasty chicken, not only the 300 kilos of garlic instead lmao

Made this for supper yesterday. We really enjoyed this recipe and will make again. We did use spinach instead of parsley and I didn't have nutmeg so we left out, but really didn't miss it because it was good without it. (although might try with to see what difference it makes.) We put the onions in first to cook and added garlic after they cooked a bit to keep it from getting bitter. We also doubled the recipe for the sauce as we love our "gravy". To keep it low carb/keto friendly, we served over cauliflower rice and a side of green beans.

never add the garlic before the onion or shallot, garlic will burn and taste bitter, sweat the onion first then add garlic... otherwise looks nice!
@AS-pug
@AS-pug Рік тому
No definitely add garlic before if you want to taste and smell the garlic better but you shouldn’t let it get too brown. You can add later it’s down to preference but earlier is much better imo.

Little tip, when prepping garlic, put some salt on the clove and then crush with back of the knife, it will start to melt and turns into a more like paste it's better for sauces.

@@katie7748 just keep working it with the back of the knife. It also means you can add it in a little later to the dish as the flavour isn't as harsh.
