Alaska and many lower states where bears are plentiful allow yearly harvest. Most harvested animals are consumed and their hides made into rugs or blankets. Bear fat is highly prized.

Bear meat is edible but tastes like very blubbery venison. And bears live in the woods and typically have a vegetarian diet of berries, nuts and seeds, with some meat here and there in the form of animals carcasses and carrion, fish and other wild running animals like elk and gazelles.

In North America, Black bears are legally hunted in most states. In California where I live, 1175 Black bears were harvested by hunters last year, out of a scientific quota of 1700 set by CA Dept of Fish and Wildlife. But most hunters who do eat bear meat make stew, sausage, etc. and don't eat those paws. 🥺

Novelty. If someone is serving you a dish called bear paw, then they will no doubt endeavor to serve you something that will somewhat resemble the name. Serving "bear claw" as a stew will not have the same impact. The issue isn't about whether you "must eat" bear claw. A bear was killed, likely for encroaching into human-occupied areas, and as a result the body is available for consumption. Many in the West would take the head and fur as trophy and call it a day, but frankly the best thing you can do is make use of every bit of the bear.

It’s handled bureaucratically because it’s with awe and respect that this chef seems to show towards the former paw of a fearsome predator. It’s many steps. Perhaps necessary to soften the paw pads and fur, but many steps nonetheless. Thus, a bureaucratic cooking process.

Я как-то на камчатке охотился на медведя. Местные коряки пытались потом накормить меня жареными лапами. Редка гадость, можно только водку ею закусывать. Не вижу в этом никакого смысла.

Bear meat is legal also in Italy, but only if it is imported from countries where hunting bears is legal (in Italy is illegal). In other european countries is legal both hunting and eating bears.

Подскажите кто нибудь этому повару, что шкуру с лапы легко можно снять перед приготовлением с помощью небольшого острого ножа. А у лука нужно обрезать и выбрасывать корни, перед тем как опускать его в бульон! И уж если бы возникла какая то странная необходимость готовить медвежью лапу, я бы ее элементарно запёк в духовке. Получился бы натуральный вкус медвежьей лапы, а не вкус бульона из курицы и имбиря. 🤷♂️

Так тут фишка, что кожу не сняли, а убрали шерсть и жесткие части, оставив глубокие слои с жирком, ножом так не сделать на сыром. А так согласен, вкуса медвежатины там скорее всего не осталось, заменить лапу на копыто свиное и будет еще вкуснее)))
