🍋 Lemon Pie
Shortcrust pastry:
200 g flour (8 tbsp. L. With a slide)
100 g butter (cold, 82%) (half a pack)
80 g yolk (4 yolks)
60 g sugar (3 tablespoons)
6 g baking powder (2 tsp flat)
a pinch of salt
Let's prepare shortbread dough:
✅ Combine flour, baking powder, salt with a bowl and grate cold butter on a coarse grater. Stir. You need to make a crumb.
✅ Stir the yolk with sugar and send to the crumb. Knead the dough.
✅ The mass should be combined into one whole lump. Don't stir it.
✅ Place 1/3 of the dough in the refrigerator.
✅ Roll the rest of the dough between two sheets of parchment 23 cm in diameter and 3-4 mm thick.
✅ Place the dough in the tart ring. Remove excess dough.
✅ Send the dough form to the refrigerator.
Lemon filling:
200 g applesauce (4 tablespoons)
100 ml fresh lemon juice (6 tablespoons)
zest of one lemon
20 g cornstarch (1 tablespoon)
50 g sugar (2.5 tablespoons)
Let's prepare the lemon filling:
✅ Prepare the applesauce: peel the apples, boil (5-7 minutes), punch with a blender and grind through a sieve.
✅ Add the applesauce, fresh lemon and lemon zest to the saucepan.
✅ Combine sugar with cornstarch and add to a saucepan.
✅ With constant stirring with a whisk, bring the mixture to a boil. Boil for 30 seconds and remove from heat.
✅ Transfer the filling to a bowl until it has cooled.
We collect the cake:
✅ Place the filling on the dough and spread with a spatula.
✅ Remove 1/3 of the dough from the refrigerator and grate on a coarse grater over the filling to cover everything.
✅ Send the cake to a convection oven preheated to 338 °F for 30-35 minutes.
✅ Remove the cake from the oven. Let it cool down.
✅ Carefully remove the mold.
✅ Scatter lemongrass with powdered sugar and decorate with candied lemon.
