You've probably heard of the traditional Scottish dish of Mince and Tatties, but maybe Skirlie is a mystery to you. I had never heard of Skirlie until recently when I got a request to make it. Skirlie is a simple side dish made of oats - it is quite dry and goes very well with the gravy in mince and tatties. The tatties are simply mashed potatoes, and the mince should be the best quality minced beef you can get. Skirlie is very easy to make, and very, very tasty. Skirlie is probably best known in the north east of Scotland - and along with mince and tatties, it's total comfort food.

I wish I could double-like this! My mom watched the video and immediately made it for her supper (she already had the mince in her freezer). She is so happy! When mom is happy, I am happy. Between this and custard tarts, we are doing just fine in the colonies. :) Thank you!

My Stepmother was from Scotland, and she made Mince & Tatties at least once a week. But her version had a lot of green peas in it. It was delicious.

Good job for a Yorkshireman! I'm an Old Fart displaced Scotsman in Southern California. Butter always works in the Skirlie, but I just scored Atora Suet off the Internet! I add a stock over water, depending on the meat it is going with. Apart from that, you are right on, Pinhead Oats are a must! The only other critique, you didn't make enough! 😉 Loved the video, all the Best.

I've eaten "Mince and Totties" all my life but i've never heard of Skirlie. Really good video! Mince and totties is something every Scottish granny just makes the best.

Made skirlie for dinner last evening, with the addition of about four slices of crumbled crispy bacon. It was delicious, and hearty enough for a full meal on its own. This one goes in the 'make this often!' file. Thank you, Keef!

Good ole' meat and potatoes comfort food, but not the usual kind. All you need is a nice tall glass of ale or a shot of whiskey? Thanks for sharing...proud of my Scottish-American heritage. The McGaffeys who came here from Aberdeen by way of Northern Ireland and landed in Portsmouth, NH in 1721, one of them wounded at the Battle of Bunker Hill! Enjoy~ Long live Scotland!

My grunnie would use the saved up fat from cooking bacon, sausages etc and beef dripping. Skirlie is great with so many foods not just mince. Fish supper and skirlie or a mealie puddin is to die for. Thanks for upload. :)

The mince and mashed potatoes was the comfort food of my childhood. My mum would also serve it with Heinz baked beans and then I would mash all 3 things together on the my plate! Delicious! I haven't eaten red meat for 11 years so it has been a long time since I have eaten mince. My dad used to put the leftover mince into a pie dish and either top it with puff pastry or mashed potatoes, which was also lovely on a cold winter night. Your video has brought back good memories. In the U.S., that style/version of oats is called, "Steel-Cut" Oats, or sometimes "Irish Oats."

Very nice Keef. Skirlie is more commonly known as Mealy Pudding all over Scotland and has slight differences (seasoning and possibly with the addition of herbs ) depending where you live or your local butcher has his own recipe. It is used as stuffing in roast chicken among other things you can get it as white pudding (battered) at chip shops . It is very much served on the dry side and requires plenty of gravy in the mince for soaking up mm yummy. I would mention that unlike England we don't use as much dairy (just a little) in mashed potatoes we generally prefer the fluffy clean earthy flavour of potatoes than for example the yellow paste that James Martin might serve up. I often see fresh boiled or steamed vegetables drowned in butter in England but every to their own. Yab-adab-adoo .

I grew up on this, still one of my favourite dishes. My daughter now serves it to her family, who wouldn't love it, mince and tatties from a Canadian family. I pour my mince over my potatoes and add peas.

I am *so thankful* to see how your Skirlie went sideways because the recipe I went from didn't say anything about pre-cooking the pinhead oatmeal, so it was like I were a horse when I tried eating it. Skirlie also known as pan haggis. Dough boys are another thing, dumplings made with suet and cooked in the mince. Oatmeal not oats btw pref pinhead

I haven’t had skirlie but my late Nana used to make a mean mince and tatties. Done well it’s lovely, simple, hearty comfort food as you say. I’ll have to try your recipe. If it tastes anywhere near Nana’s I’ll be happy as I’ll always associate it with the lovely lady she was.

My Mum made this a lot. She also put turnip and parsnip i hers. I used to mush everything together and put HP on it.

I really love traditional Scottish food, and Scotland has such fine produce. I had a bad example of skirlie once in Aberdeen which tasted like warm gravel, but cooked nicely like this it is a fine staple indeed. Mrs Keef has impeccable timing!

Pinhead oats shld be soaked overnight to swell and soften. We had porridge every morning before school made with pinhead oats. Xx

You could have used the fat drained from the mince... I always save the rendered fat from beef, pork & chicken in jars in the fridge to use in cooking... it's great...

Every culture has its own version of mince 😍. Im Hispanic and here in South Texas we call it "picadillo". It's ground beef and you pretty much add whatever veggie you have on hand. For seasoning I add salt, pepper, garlic, cumin and a bit of tomato sauce and beef bouillon. Serve with a side of Mexican rice and pinto beans and flour tortillas =)

I am glad to see this video and learn about skirlie. I am a Scottish descendant across the pond who is trying to get in touch with my Scottish heritage and I am wanting to learn more about Scottish foods that I can try to cook myself. I’m not sure where I could find that type of oats in the US as I have never heard of them here before.

When the water went in to the skirlie I winced. What you've made there is a kind of porridge, skirlie absolutely should have a crunch to it. If you want you can sous vide it and then later fry it, but the butter and or suet is the moisture. Slow temp, when you can no longer clearly see the onion it's probably done. Don't burn it but absolutely no water, the nutty crunch is the delight that goes with gravy etc. I like to pick up some of the leftovers from the pan in a fresh piece of bread. Skirlie is closely related to white pudding or mealy pudding, but that's always in casing and most likely has barley.

Thanks for this, the skirlie looks very interesting. I'd be tempted to switch the mash for bubble & squeak, just because both dishes are named for the sound of cooking. Really like the idea of using it to stuff a bird.

When I do my mince and tatties. I brown my mince put in one oxo cubes. Put in the onions then put in my gravy. Put in two pudding spoons of broon sauce. Then carrots frozen peas. Leave for 45 minutes then check it. Put in more salt and pepper. Then put on the tatties. Then once ready eat and enjoy

An Irish Lancastrian, I lived in Beverley, working in Hull for a while. Hilarious, but delightful. A vegetarian "haggis" used to be made in Alsace using carrots and potatoes as I recall. French Boudin, "black" pudding (purple really), far superior to the English version, even from the butcher's in Orchard St., Preston in the 60s - World Champions?

@@Keefcooks The East riding accent is most unusual (compare and contrast with Peterhead in Scotland) ; difficult for a "foreigner" to comprehend. Kingston Telephone company unique in the UK. White telephone boxes and excellent service. Excellent sense of humour and wonderful pubs, eg "Nellies" in Beverley, and many others with brilliant live music. Heard Stevie Marriot twice before he carked it - in a pub in the Old Town and a working men's club.

My sister lives in Withernsea so I pass through Hull fairly often, but haven't really explored it much. We had a weekend in Bev a few years ago, including a pint or two at Nellie's - this was before I found out what a plonker Humphrey Smith is and how badly he treats hi people. Couldn't believe it in Withernsea the fist time somebody asked me if I wanted some 'waaaaaahn'. And somebody else talking about their 'spaaaahn'. Yep, definitely weird. But I do like the patties from the chippies.

You have sorted my dinner/super out for tomorrow. I was going to make Corned Beef Hash or some baked fish or something else but now it is going to be Miced Beef and Taties. Hi Keef sorry !@! I have been very very busy lately, no time to watch UKposts, except, at this particular moment I had some time. So happy new year to you and your wife and everybody else around you. About this, dish, about ,this, dish, mmmh, it looks tasty! The French do something very similar only that they mix the mince and gravy with the mash after and then everything a few seconds in the frying pan just to brown it, at each side. Mmmh yummy tum tum food.

For years I have made mince, not a gourmet I brown meat and onion, put in a can of sliced carrots, and add BISTO Gravy mix ( public has this Let simmer stirring occasionally ....really tasty !

Huh. My Gram used to make skirlie (with tallow) all the time when I was growing up, and it’s amazing smeared on buttered toast. I had no idea it was Scottish.

I never used to like skirlie, until my sister made it, don't know what she does different, but my sister's skirlie is great.
