The connector is a push pull type commonly called a Lemo Connector. Use a decent amount in the AV world for compact settings

One application of a 200g accelerometer is a melty brain combat robot. I could use one since I am building one !

God those lemmo connectors (the aeronautic ones at least) are a huge pain to assemble, and to disconnect.

200g is probably like impact level. So dropping things, crashing things... I know at least some rocket people (bps space) have used the bno055 though I think he also had a high g accel on his boards too. Those connectors look super cool, nice for a cyberdeck or something!

If you are looking for a good quality and relatively cheap push-pull avionic style connectors I would recommend Weipu SA series. I also use ST12 with threaded coupling because it's cheap, waterproof and comes with variants up to 9 pins. SA and ST are cheaper because they are not made of brass. SA (aluminium), ST (zink alloy). ST12 costs about 3-4 USD in retail here in Poland. So it's dirt cheap compared to other avionic style connectors.

Re 200g sensor applications. I think another use case is inelastic collisions, where g forces are very high without involving particularly high velocity or rocketry. Like helmets colliding or coffee mug on granite counter top

You could use them for inelastic collisions although I'd use a higher G accelerometer. They're used in rocketry to determine rapid acceleration but the reason to know that, at least part of it, is to determine if a design is valid and if there are potentially high failure points. I used to work in the ballistic section at my job where they'd use the Endevco accels that went up to 60k Gs. For a weapon system you'd measure acceleration on the recoil portion of the system as well as other places, such as the engine. This would give you an idea of strength of design (used with other sensors) as well as faulty or areas of interest if they had higher than anticipated Gs.
