I'm not sure if the problem here was the temperature, or the temperature differences (between the sides and bottom in case of tray and between the area concerned and the whole vicinity in case of floor).

I am a plastic research guy... Generally, most of the plastics that we use in our daily household or workplace have flexibility at room temperature. Some plastics like PP, HDPE also has crystallinity due to which they are tough and long lasting. Coming to flexibility of these plastic container/buckets/treys, it comes from their segmental mobility upon stretching. When such plastics were kept frozen for long time in a deep freezer they tend to become too hard and lose their flexibility due to a lack of segmental mobility. When it comes to pouring liquid nitrogen into those buckets you are instantly freezing the polymer chains and they are becoming a glassy material at cryogenic temperature eventually breaking. This is a very good demonstration for students as well, particularly to explain why you should not use a plastic cup to take liquid nitrogen.

I remember a cool liquid nitrogen seminar at a science event when I was a kid, the guy made instant ice cream with it out of cream and a few other fun things… then he demonstrated the instant brittleness from freezing with rubber gloves and plastic cups :) then he showed how it fizzes and boils inside its metal ladle.

Ha Ha. Good one. I regularly use utterly standard HDPE beakers (50 ml) for transferring LN2. I did it today. A convenient benefit is that the thermal conductivity is low, so I can handle the beaker rims with nothing more than nitrile gloves and knit polymer glove liners. The problem in the OP video seems to be a differential thermal expansion problem (the cold parts both contract and become brittle, but build up thermal expansion stress due to the constraint of the un-cooled parts around them).

Yeah the trainers and jeans were a particularly bad choice. Liquid nitrogen tends to soak into fabric and the fabric holds it to the skin and causes cryoburns. He should have been wearing a plastic bags on his feet at the very least.

In high school, our chemistry teacher demonstrated chilling various items in liquid nitrogen. A racquetball so treated then shattered when he tossed it against a wall (I kept a sliver of it as a souvenir for a long time because it looked so cool), so I knew Nile's container didn't stand a chance.

As someone who used to work with Liquid Nitrogen. (LN) Always wear a Cryo glove on at least one hand when liquid is present in liquid form outside of the storage container. If something goes wrong you have at least one hand to react with. Only pour LN over a carpeted surface (or carpet tiles) . that is larger than the receiving container. Carpets are great at catching the spill and reduces the spread area while it changes back to gas state. Stainless steel, and borosilicate glass are the best thing to hold LN outside of the storage container. They can withstand the rapid change in temperature the best. Avoid aluminum and plastics. Aluminum will warp (This is why bakers and cooks allow aluminum pots and pans to cool before washing them) and many but not all plastics will often shatter. It is hard just by looking and touching a plastic to know if it will shatter or not. Finally with playing with LN and food make sure ALL ln has evaporated from the food before eating it.
