Ingredients for MERINGUE:
80 g of roasted hazelnuts (you can choose any nut to your taste)
100 g of protein
200 g sugar (including already a bag of vanilla sugar)
1/4 teaspoon citric acid
10 g cocoa powder( not alkalized)
Meringue is dried in the oven at medium level top bottom mode without convection at a temperature of 85 degrees Celsius for about 2.5 hours
INGREDIENTS for CHOCOLATE-NUT sponge cake:
INGREDIENTS FOR one FORM of 22 cm (3 cakes) or a form of 20 cm 4 cakes)

10 g cornstarch
100 ml of milk
110 g flour
15 g cocoa

250 g butter
