Ingredients For the dough: ¾ cup warm milk (whole milk or 2% preferred) (110 degrees F) 2 ¼ teaspoons quick rise or active yeast (1/4-ounce package yeast) ¼ cup granulated sugar 1 egg plus 1 egg yolk, at room temperature ¼ cup butter, melted (I prefer salted, but unsalted works, too) 3 cups bread flour, plus more for dusting 3/4 teaspoon salt For the filling: 2/3 cup dark brown sugar (light brown sugar also works) 1 ½ tablespoons ground cinnamon ¼ cup butter, softened For the cream cheese frosting: 4 oz cream cheese, softened 3 tablespoons butter, softened ¾ cup powdered sugar ½ teaspoon vanilla extract Instructions Warm milk to around 110 degrees F. I like to do this by placing milk in a microwave safe bowl and microwaving it for 40-45 seconds. It should be like warm bath water. Transfer warm milk to the bowl of an electric mixer and sprinkle yeast on top. Add in sugar, egg, egg yolk and melted butter. Mix until well combined. Next stir in flour and salt with a wooden spoon until a dough begins to form. Place dough hook on stand mixer and knead dough on medium speed for 8 minutes. Dough should form into a nice ball and be slightly sticky. If it's TOO sticky (meaning it's sticking to the bottom of the mixer, add in 2 tablespoons more bread flour.) If you don’t want to use an electric mixer, you can use your hands to knead the dough for 8-10 minutes on a well-floured surface. Transfer dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel. Allow dough to rise for 1 hour to 1 ½ hours, or until doubled in size. This may more or less time depending the humidity and temperature in your home. After dough has doubled in size, transfer dough to a well-floured surface and roll out into a 14x9 inch rectangle. Spread softened butter over dough, leaving a ¼ inch margin at the far side of the dough. In a small bowl, mix together brown sugar and cinnamon. Use your hands to sprinkle mixture over the buttered dough, then rub the brown sugar mixture into the butter. Tightly roll dough up, starting from the 9-inch side and place seam side down making sure to seal the edges of the dough as best you can. You will probably need to cut off about an inch off the ends of the dough as the ends won’t be as full of cinnamon sugar as we’d want it to be. Cut into 1 inch sections with a serrated knife or floss. You should get 9 large pieces. Place cinnamon rolls in a greased 9x9 inch baking pan or round 9 inch cake pan. (I also recommend lining the pan with parchment paper as well, in case any of the filling ends up leaking out.) Cover with plastic wrap and a warm towel and let rise again for 30-45 minutes. Preheat oven to 350 degrees F. Remove plastic wrap and towel and bake cinnamon rolls for 20-25 minutes or until just slightly golden brown on the edges. You want to underbake them a little so they stay soft in the middle, that’s why we want them just slightly golden brown. Allow them to cool for 5-10 minutes before frosting. Makes 9 cinnamon rolls. To make the frosting: In the bowl of an electric mixer, combine cream cheese, butter, powdered sugar and vanilla extract. Beat until smooth and fluffy. Spread over cinnamon rolls and serve immediately. Enjoy!

Here in Greece "The Final Countdown" is one of the most legendary songs cause its always connected to our first European Basketball title back in 1987. It is connected with that legendary moment. It brings chills to every basketball fan especially now that we approach 20 years without a title. May the basketball gods (Galis,Giannakis,Diamantidis,Spanoulis) bless us again with an international title.

FOR THE DOUGH: 244 g warm milk 2.5 teaspoons instant dry yeast 2 large eggs at room temperature 75.67 g salted butter** (Softened) 100 g granulated sugar 1 teaspoon salt 562.5 g all-purpose flour (divided) FOR THE FILLING: 113.5 g salted butter (almost melted) 220 g packed brown sugar 2 tablespoons cinnamon 119 g heavy cream (for pouring over the risen rolls) FOR THE FROSTING: 170.1 g cream cheese (softened) 75.67 g salted butter (softened) 240 g powdered sugar 0.5 tablespoon vanilla extract Instructions Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop. Add the eggs, butter and sugar. Mix until combined. Add in salt and 4 cups (save the other ½ cup and add only if you need it) of flour and mix using the beater blade just until the ingredients are barely combined. Allow the mixture to rest for 5 minutes so the flour has time to soak up the liquids. Scrape the dough off the beater blade and remove it. Attach the dough hook. To knead, beat the dough on medium speed for 5-7 minutes, adding in up to ½ cup more flour if needed to form a dough. The dough should be elastic and smooth. **The dough should be tacky and will still be sticking to the sides of the bowl. That's ok! Don't be tempted to add more flour at this point. We generally add about 4 ½ cups, but start with 4 cups. Spray a large bowl with cooking spray. Use a rubber spatula to remove the dough from the mixer bowl and place it in the greased large bowl. Cover the bowl with a towel or wax paper. Set the bowl in a warm place and allow the dough to rise until double. I like to turn on the oven to the lowest setting for 1-2 minutes. Then turn off the oven and place the dough to rise in there. It normally takes about 30 minutes for the dough to rise. Do not allow the dough to rise too much or your cinnamon rolls will be airy. While the dough is rising, prepare the cinnamon filling. In a medium bowl, combine the soft butter, brown sugar and cinnamon, mixing until well combined. Set aside. Sprinkle a pastry mat generously with flour. Turn out the dough onto the pastry mat and sprinkle the top of the dough with additional flour. Flour a rolling pin and roll the dough to about a 24×15" rectangle. (the size of the rectangle can vary…it does not have to be exact!) Use a rubber spatula to smooth the cinnamon filling over the whole dough rectangle. Starting on the long end, roll the dough up tightly jelly roll style. Cut into 12 slices and place in a greased 9×13 baking pan.**** Cover the pan and allow the rolls to rise for 20 minutes or until nearly double. Preheat the oven to 375 degrees. Warm the heavy cream until the chill is off. Don’t make it hot…you just don’t want it cold. It should be warm to the touch. Once the rolls have risen, pour the heavy cream over the top of the rolls, allowing it to soak down in and around the rolls. Bake at 375 degrees for 20-22 minutes, until the rolls are lightly golden brown and the center rolls are cooked through. Note…the time will vary based on how big the rolls are, what type of pan, how close the rolls are packed, etc. They could take up to 25-27 minutes. Check the rolls at 20 minutes. If they are getting too browned, cover loosely with foil for the remaining baking time. While the rolls are cooling, prepare the cream cheese frosting. In a large bowl, combine the softened cream cheese and butter using a hand mixer. Blend well. Add in your favorite extract and the powdered sugar. Beat until combined. Spread the frosting over the cooled rolls. Store in an airtight container. I like Stromae.

Ingredients for 14 servings DOUGH ½ cup unsalted butter(115 g), melted 2 cups whole milk(480 mL), warm to the touch ½ cup granulated sugar(100 g) 2 ¼ teaspoons active dry yeast 5 cups flour(625 g), divided 1 teaspoon baking powder 2 teaspoons salt FILLING ¾ cup butter(170 g), softened ¾ cup light brown sugar(165 g) 2 tablespoons ground cinnamon FROSTING 4 oz cream cheese(55 g), softened 2 tablespoons butter, melted 2 tablespoons whole milk 1 teaspoon vanilla extract 1 cup powdered sugar(120 g) Preparation Generously butter two disposable foil pie/cake pans. In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly. Sprinkle the yeast evenly over the warm mixture and let set for 1 minute. Add 4 cups (500g) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour. After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional ¾ cup (95g) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface. Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even. Spread the softened butter evenly over the dough. Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon. Press the mixture into the butter. Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end. Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8cm) thick each. Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes. Preheat oven to 350˚F (180˚C). To prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, whole milk, vanilla, and powdered sugar, until smooth. Remove plastic wrap. Bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown. While still warm, drizzle evenly with frosting. You asked for this, Joel.

His reason for not "getting turnt" to Final Countdown was that it was too old, but he had no problem choosing Dancing Queen (which is from the 70s), Wake Me Up Before You Go-Go (which is 2 years older) and La Lambada (which came only 3 years after Final Countdown). He should have just admitted that he doesn't like it or that it's overplayed, instead of using the excuse of its release year.

11:34 Just for refrence, Bella Ciao is an Italian folk working song sung by Mondina workers in the late 19th Century. During the second world war it was adopted by the anti-facist Italian Partisans a resistance group fighting against the Nazi's occupation of Italy, the tune remained the same but most of the lyrics were changed to fit the different circumstances. It regained popularity in 2017 when it was featured in the Spanish tv show Money Heist. Many people however find the following casual use of the song in popular media to be disrespectful to the people that fought and died to the tune. In my opinion it certainly shouldn't be featured in this video, it's a song for quite reflection not a song to dance and sing a long to at a club.

For the dough: ¾ cup warm milk (whole milk or 2% preferred) (110 degrees F) 2 ¼ teaspoons quick rise or active yeast (1/4-ounce package yeast) ¼ cup granulated sugar 1 egg plus 1 egg yolk, at room temperature ¼ cup unsalted butter, melted 3 cups bread flour, plus more for dusting 3/4 teaspoon salt For the filling: 2/3 cup dark brown sugar (light brown sugar also works) 1 ½ tablespoons ground cinnamon ¼ cup unsalted butter, softened For the cream cheese frosting: 4 oz cream cheese, softened 3 tablespoons unsalted butter, softened ¾ cup powdered sugar ½ teaspoon vanilla extract Instructions Warm milk to around 110 degrees F. Enjoy!
