For ~60 gingerbread men (~450-500g):
Dough:
- 80g honey
- 80g sugar
- 60g butter
- 1 egg yolk
~ 280g flour
- 10-50 ml milk or water
- 1 tsp. baking soda
- 1 tsp. cocoa
- 1 tsp. ginger
- 1 tsp. cinnamon
Optional:
- 1/2 tsp cardamom
- 1/2 tsp. nutmeg
- 1/2 tsp. coriander
- pinch of salt
- pinch of vanilla
Bake the gingerbread in a preheated 180°C oven for ~4 - 7 minutes. Baking time depends on the size and thickness of the gingerbread. I have small gingerbread ( ~ 6 - 3 cm) baked for about 5 minutes. The baking time also depends on your oven.
🌶 What else you can add to gingerbread dough:
Cloves, anise, ground black pepper, vanilla extract, orange or lemon zest. Adjust the weight of the spices to your taste.
Glaze:
- 1 egg white ( ~ 30-35g)
~ 200-220g powdered sugar
- a couple of drops of lemon juice
