Sauce and marinade for fish:
*Egg yolk - 4 pcs.
*Mustard - 8 tbsp. l.
*Sugar - 4 tsp.
*Wine vinegar - 4 tsp.
*Sunflower oil - 400 ml.
* Ground black pepper.
*Salt.
Beat yolk, mustard, sugar.
Add ground pepper, salt to taste and vinegar.
While whisking the mustard mixture, pour vegetable oil in a thin stream. Beat until smooth.
Clean the fish, remove the gills and entrails. Make incisions and salt. Apply mustard marinade, add lime and lemon inside and in the place where the gills were. Seal in parchment and foil. Bake for 3 hours at 200 degrees Celsius. Remove the fish from the parchment and bake for 30 minutes at 190 degrees Celsius.
