Greek bread has long been popular not only in Ukraine but also in Polish cuisine. This is a dish based on buckwheat with the addition of meat, roast vegetables or potatoes, there are many options for cooking. Some people call buckwheat - buckwheat cutlets. I want to share a recipe for buckwheat with minced chicken and tomato paste and apple sauce. Instant coffee gives a special taste to the sauce - quite unusual, but very tasty, the aftertaste of the sauce just captures the receptors!
A simple recipe for buckwheat cutlets
Servings: 6
Preparation time: 20 minutes
Cooking time: 25 minutes
Ingredients for cooking buckwheat
For hrechanyky:
300 g of minced chicken
125 g of buckwheat
50 g of lard
250 ml of water
2 eggs
½ tsp. salt
1/3 tsp. ground black pepper
3-4 tbsp. l. semolina (for breading)
3-4 tbsp. l. sunflower oil
For the sauce:
2-3 tbsp. l. tomato paste
200 ml of water
3-4 cloves of garlic
½ bitter pepper
1 apple
1 tsp. instant coffee
1 pinch of sugar
1 pinch of salt
How to cook buckwheat
Pour 125 g of buckwheat 250 ml of water, salt to taste and cook over medium heat for about 15 minutes. Always pay attention to the instructions on the package, they may differ depending on the manufacturer.
Chop 50 g of lard with a knife. When the buckwheat has cooled, add 300 g of minced chicken and chopped lard.
Add a little salt and pepper. Give the base for buckwheat a cutlet-like shape.
Bread buckwheat in semolina (you will need about 3-4 tbsp. L.).
Cover the pan with parchment and grease with sunflower oil. Put buckwheat and bake in the oven at 180 degrees for 15-20 minutes.
For the tomato sauce, grate 1 apple. Transfer to a pan with 2-3 tbsp. l. tomato paste and 200 ml of water.
Cut into thin slices ½ bitter pepper and add to the sauce with 1 pinch of sugar and 1 pinch of salt. Stew for 2-3 minutes and add 1 tsp. instant coffee. Mix the sauce and bring to the desired consistency.
Serve ready-made buckwheat with tomato sauce.
