The vegetable with holes is a lotus root, and the weird white guts looking stuff is shirako (fish sperm). Those are pretty much the only exotic ones I recognize.

place needs a proper scrub down, but knowing japanese people, they work 24/7 so there is no time to close up 1 or 2 days to get it done. but also, they are japanese people. they have a reputation for being clean. i wouldn't be surprised if he cleans the important stuff but leave all the "whatever" work for some day he closes for days.

That’s quite disrespectful. I don’t see the harm in someone expressing their personality in what they do, particularly when its their own business. It’s like saying pop stars shouldn’t put on a big show with glitz, glam, make up, lighting. They should just sing. Imagine how bland the world would be if we didn’t have different restaurants with their various personalities, logos and themes. However, you are completely entitled to your opinion and at the end of the day good for you. I just felt like sharing mine with you, I completely understand if you don’t like his/their style but I do.
