I first saw this 6 years ago and have been experimenting ever since. I've found it's a good way to use up leftover whatevers like an overripe banana, applesauce, pretty much anything that is somewhat mushy; even cooked veggies that can be run through a blender. Sweet bread, spicy bread, garlic/onion, you name it. It's just fun to try it out. Thank you Stacy!

1 c sprouted flour (or other flours) 1 c sweet potatoes, cooked, peeled 1/2 tsp sea salt Mix all together, roll into ball, cut into smaller pieces. Roll out into flat circles. Lightly oil pan, bake 2 minutes 1 side, flip, bake another 3 minutes or more...check for browness. Store in container with lid, placing old, clean t-shirts between layers which help to keep them moist for a few days.

I'm Italian on my mothers side, and my grandmother had what she called her "spagetti pole". That is the approximately one inch thick dowell rod material. Gram would make homemade spagetti noodles with flour/egg combonation. She would roll out the dough as flat as she could get it, and set it aside to let it dry for a little bit. Then she would take her spagetti pole and roll up the dough. She would cut that roll by hand, making perfect Fettuchini style noodles. We called the spagettis. GOD I MISS HER!

My mother (I'm in my 70's) would make Gnocchi with same ingredient (I think) then make the dough into snake like rods, cut them bite size, & then we'd thumb roll over the back of a colander to give the pasta the shape and bumps!! I think I need to try this but of course boil the pastas for a min or two. I loved the dowel suggestion in the video - even though I have a roller, I want the dowel.

Recipe! 1 cup sweet potato (1 large ) boiled (or pumpkin or other sweet squash) 1 cup flour (sprouted wheat or other) 1/2 tsp salt 2-3 Tbsp coconut oil (or other oil for frying) Peel and mash the sweet potato. Mix in the salt and flour until the dough is not sticky. Add more flour as necessary. Shape the dough into a log, and cut it into piece depending on how big you want your flatbreads to be. 5-6 large pieces, 8-10 small. Make them into balls than roll them out on a floured board. Heat up your oil in a heavy bottomed pan. to medium heat. Put the rolled out dough into the pan, one at a time, and let cook a couple of minutes (2-3 minutes) on each side until it starts puffing up and browning. You can use clean old t-shirts to store your flatbreads. Breads can keep for several days.

Sounds like you've lived quite a full life Jenny. As you can see, I'm a Jenny too (our names mean 'female donkey'!! Beasts of burden we are! But reliable, eh?!) Anyway, though it isn't easy, I wanted to live something of a self-sufficient life, & used to cook, sew, recycle, compost, grow many veges & was very happy doing so. My (now ex) husband didn't feel the same about my interests. Sad circumstances, here too, have cut short my successes & delight with home growing. I can't stop trying though everything has changed dramatically. I used to live by the sea before my 'self-sufficient' phase. I'm 60. Health not so great. The sea air must be doing you a lot of good (I hope). I'm very sad you have no garden. I sometimes think of what it would be like if I was to be asked to relocate to a smaller (more manageable) home. I'd hate it I think. There's a UKposts channel called Home Grown Veg. He grows in pots as well as his garden...in England. Well worth watching. I love his casual style of presentation & adore his dog, Molly! All the very best to you, Jenny. I hope you have some interest/s that delight you & replace that joy your gardening days gave you. :)

@jansnell5036 2 роки тому
@@msgottaneedtoknow It’s called EOE. Eosinophilic Esophagitis. It’s more common in children. Allergies (usually from food) that cause the eosinophils (white blood cells) to accumulate in the esophagus, sometimes other places. It can cause food to get stuck due to narrowing. In children I think it causes poor appetite and stomach problems. If you Google it you should find some info. It took several years to get a diagnosis and used to be rare, but for some reason more people are getting it, or at least more doctors are learning about it. Doctors kept blaming it on gerd. Finally an endoscopy with a biopsy showed the high count of eosinophils in my esophagus. Allergy tests weren’t very helpful. A blood test specially for eosinophils could show something. Hope this helps. 🙏🏻 A GI doctor is your best bet.

This recipe is awesome-as soon as I watched the video, I went to the store and bought sweet potatoes. I used Pamela’s gluten-free flour and of course Redmond salt. I have a “thing” for old kitchen tools with red wooden handles...so, of course it’s my fav. Grandma’s is really big. She didn’t mess around! When she baked, she made enough to feed an army! 😂 I’m the grandma now, and miss my mom and her mom so much! 🥰 I can feel their love through using their tools when I’m cooking. I gave the fancy walnut rolling pin away. I love my rolling pins! I like how you found a good use for your old broom handle! A wooden broom handle would make a nice dowel for hanging pasta to dry too! I’ll keep my eye out for a broom with an unpainted handle!

You do know that cattails are delicious roasted in a fire and if soak the core in water and set it out in the sun to dry you will cattail flour that makes a really awesome thickener and makes great bread. If you go the bread route it takes alot of cattails to get enough to make even 2 flatbreads. Literally pounds upon pounds of cattails for bread but you can use every piece of the cattail fibers for food, thread for baskets, the fluff for filling just a plethora of uses. My grandmother who passed away at 97 years in 1979 was Ojibwe and she taught me about cattails and what they are good for actually she taught me everything I know.

Made this and it was AWESOME! It's my new favourite flatbread, I like it better than my awesome homemade tortilla flatbread for wraps. This makes a very filling, slower digesting (better for the glycemic index and Diabetes/blood sugar than wheat etc.) wrap. And it stays together really well, perfect for wraps.

I was looking for a sweet potato flatbread recipe and came across this. I love this idea and I’m going to be trying it with chickpea flour. I was shocked however, to hear you say to not eat too much fruit. That they have too much “sugar” in them is what the doctors tell people because they don’t want them to heal. Especially diabetics. I had very little faith in the medical system but completely lost it when I figured out everything they had done that led to my husband‘s death, two years ago. Yes, true story, like so many others. Fruit has good sugar. I’ve been following Dr. Sebi‘s alkaline diet for a year now and I’m 65. I have never felt better in my life. More energy, less sleep, very little inflammation. Back and neck pain from an accident, has lessened hugely. Disease cannot grow in an alkaline body. I eat a lot of fruit every single day. Smoothies most mornings. I have no health issues and take no medications.

So pleased your video flagged up in my recommendations. I am diabetic so if I have a potato substitute it's sweet potaoes because of their low glycemic index plus I love them. Recently I was looking into keto bread and this has given me a great idea to use either coconut or almond flour as a substitue. Already have some coconut flour so it's off to the shops for some sweet potatoes. 🙂

The problem with gluten free flour is that gluten is the binder that holds bread together. So if using a gluten free flour , it is necessary to have some other binder in the flour or bread. In this case it was the sweet potatoes in the bread that acted as a binder. I believe eggs can work as a binder in other gluten free breads that tend to fall apart.
@jsclar7037

I was surprised she mentioned coconut flour in the video as it is a very different four to bake with. Typical coconut flour recipes call for much less flour than other kinds and a lot of eggs. Coconut flour is heavy on the fiber and absorbs a lot of liquid.

I just made this and it turned out amazing! I use Jovial's all purpose einkorn flour so I much prefer to make breads at home. I started with a 1:1 ratio of sweet potato to flour but I needed closer to a 1:2 ratio, with more flour than sweet potato. I also cooked these in butter. Just 2 minutes per side did the trick. I over-cooked the first one way too much and it turned out as hard as a stale chip 😅 Oh I also covered the pan while I cooked them to keep in the moisture. I bet these would be good with homemade nutella! Thank you Doug and Stacy!
