The thing is, it doesn't. It's just pointing out that the father is vampire, it's making us focus on that. If someone says "British people are stupid", some kid may say "My British dad would disagree", but it doesn't necessarily mean he has two fathers, only that he wanted point out his father's nationality. Other way of saying "vampire dad" is saying "dad who is a vampire", but not only you can try interpreting it they way you did anyway, but it also sounds shittier.
