1 TSP TURMERIC POWDER

3 TBS GHEE
380 GR ONION (3 MED ONION)
1 TBS GINGER PASTE
1.5 TBS GARLIC PASTE
2 TSP SALT
10 GREEN CHILLI
6 ALOO BAKHARA (DRIED PLUM)
STEP 5 LAYER THE BIRIYANI:
1ST LAYER 1 TBS GHEE
2ND LAYER RICE
3RD LAYER CHCIKEN BHUNA
4TH LAYER RICE
TOP REMAINING BHUNA SAUCE & CORIANDER
FOIL THE TOP TO KEEP STEAM LOCKED IN TO STEAM COOK THE RICE.
COOK THE RICE 30 MINS ON LOW HEAT. LEAVE 30 MINS TO REST BEFORE MIXING AND ENJOYING THE AMAZING BIRIYANI...

I made this tonight and finished eating around 10 seconds ago!! I felt that i needed to say how amazing this recipe is. I'll be honest that i didn't have all of the ingredients, i substituted the bay leaves for dried curry leaves, and i didn't have the dried plums. However, it had SO much flavour.

In south India we use Jeeraga Samba rice for Briyani. So good taste and easily digestible. Basmati rice not give that much aroma. In my place 2 dollar for basmati rice per kg but for jeeraga samba rice is around 4 dollar.

I cook every day but have always been frightened of cooking Indian food, but you have changed all that. I cooked your Madras for 16 people (after doing it twice before) and have today made this Biriani (you forgot the peppercorns in the ingredients list). I'm hooked. Thank you so much. I started trying to cook these meals 30 years ago and failed dramatically. Persevered on and found a celebrity chef who went to India, quite an improvement. I am a Pakistani,and Biryani is kind of our national dish😄We always add tomatoes to Biryani and I think they add a very rich taste , also a few lemon slices on top of rice gives an amazing aroma,thats the only difference I noted here.If you dont have aloo bukhara,tarmarind also gives a kick to taste.This recipe also looks good,I will try it.Good job!

But why did he throw away the flavor full water in which he cooked the rice. It would have added a lot of flavor and richness of the spices to the overall taste if he would have cooked it with the right amount of water.

Hi I’ve cooked this recipe a couple of times and it certainly is delicious, I’m not a fan of tomatoes unless used for a sauce, therefore I loved the fact there was no tomato in his recipe, I have a love for lemons and limes so tend to use them at every given opportunity. 😊

Just follwed this recipe almost to the letter (I always change it a little). Can't buy Aloo Bakhara where I live). Added a small amount of tamarind instead, added Panch Phoron to the Bhuna as well. It tastes utterly gorgeous!! I always thought Biryani was going to be far too complicated for me to cook - thank you!

I've been watching this video for about a month . Wanted to try this recipe . So I invite my family round for a meal . I made this for dinner today but I forgot to buy plain yoghurt and dried plum. I had to use my daughter's strawberry yoghurt and substitute plum with dried raisins. It turned out delicious, my fussy daughter rated it 9/10. Thanks for the recipe, I like it better than the more complicated version.

Just to add one helpful thing here if possible the Dried Plums mentioned sounding like "Aloo Bichar" is in fact Alu Bukhara available from online Indian spice sellers but in fact it's only what in the UK we call dried Prunes and you can buy them with stones removed sealed in packets, in any good supermarket. They are truly delicious and it's fair to say Raisins or Sultanas are not a good substitute.

I just wanted to come here to say thank you for this delicious Chicken Biryani recipe. I went to the shop and bought all the spices, and I must say, 15£ was my best investment, because, this dish is just delish. I can't wait for my partner to come home now, to try it. Made it this evening 100% legit with less mucking about. I used the fresh version of the aloo bhakar as dried weren’t available locally. Now I have to write this out for the recipe binder.

Thank you for this teaching and this amazing authentic recipe which I remember these ingredients and how it is being prepared and cooked. I was a food server for an HRH prince in Riyadh. Latif, made this today and the family gave it 10/10. The rice turned out perfect, and as Mahooth said you can taste every spice in there. It was great fun to make, I substituted dried prunes for the aloo bakhara. Thank you for the brilliant video!

Absolutely delicious. I used prunes from the grocery store and regular cinnamon sticks. Turned out amazing. The whole family loved it. Thanks for sharing from the deep heart of Texas!

I followed this biryani recipe step by step when cooking. Instead of chicken I used paneer and less oil and ghee. Since I didn't have any dried prunes, I replaced that with tamarind paste. Cooking is also daring to replace one ingredient with another. Now I don't know the taste of biryani cooked with dried prunes, but I can tell you that the biryani cooked with tamarind paste tasted excellent. Thank you so much for this biryani recipe.

I cooked this up on saturday, the only thing I didnt have was the dried Plum so used a few Prunes, this has to be one of my absolute successes', it was sensational no two ways about it, I cant thankyou enough .

I think that's what prunes are right? I'm guessing he meant not tinned in juice. But I'm not a mind-reader!

I tried this today, chef. Came out very well. I love the sweet/sour flavour imparted by the alu bukara.. in fact I'd add ten+ of them to get even more flavour. I ended up with a lot of rice, however. I think for my purposes I might use maybe 500g. Letting the garam masala steep in the water works really well. Thanks for the recipe!

Hi, Brian! I bought a jar of dried plums online and it has a sweet and sour flavour but it's very salty as well. Aside from the sweet and sour flavour, does aloo bukhara taste salty, too?

Prunes are dried plums, I think they’ll do the same job as alu bakhara

What I love about Latif is that he explains WHY he is doing things. Really helps me. What would help me more if he could give measurements tsp, tbs etc as level ones. I get that it's done by eye/feel/experience/taste but it would really help us get an angle on the quantities to work from.

This looks amazing. I love the Bengali type of cooking and have now subscribed, as all i see on youtube is the biryanis with ingredients that alter the taste such as tomatoes etc.... Biryani is served best with salad and this is where people get to eat tomatoes and lemon with it .

Hello my friend. Yesterday I visited the Indian Grocery Shop for the first time. It was huge. I was able to buy everything needed for this dish. I am so excited. Over this coming weekend I will challenge this recipe. By the way, I removed all of the spices from their packages and placed them into glass jars. This way they will keep much longer. I included the expiration dates on each jar. Very important!!! At the same time I became familiar with each spice. A lot of fun!
