🍬Caramel Toffee:
300 g ( 10.5 oz ) sugar
200 g ( 6.5 fl.oz ) of condensed milk
200 ml ( 6.5 fl.oz ) of cream (not less than 30% fat)
100 g ( 3.5 oz ) butter (fat content not less than 82%)
4 g - a pinch of salt
250 g ( 8.8 oz ) roasted peanuts
🍬Prepare the caramel:
1. Melt sugar until dark brown caramel.
2. Combine cream and condensed milk and heat until steaming.
3. Pour hot cream and condensed milk in a thin stream into the caramel. Stir until smooth
4. Add the butter, stir and, with constant stirring, bring to a temperature of 124-125C ( 255F ) ( Gas 1/2 ) (soft ball).
5. Add salt and roasted peanuts, stir.
6. Put the mass in a square frame on a baking sheet with parchment, flatten, let cool, refrigerate for at least 10 hours.
7. Remove the mold and cut the sorbet into cubes.
